I was just thinking that the pancetta, mushrooms and onions could use some malt vinegar to balance the fat and you went and hit it with the apple cider vinegar. Good call. You need some acidity to balance a really rich burger like that. Normally the vinegar in the mustard, ketchup, and pickles would provide the acidity, but none of that really goes well with a cheesy mushroom burger.
I remember trying and loving the mushroom double Swiss ar burger King when i was young and have always wanted another, Sometimes you hear about maybe they'll bring it back but I've never seen it, Any other versions I've seen the mushrooms are to thick the original mushrooms were obviously done in a food processor to get them super thin.
Is this perfection. I think so, 3 mushrooms to build flavour. The cider Vinegar is a great addition, I was hoping to see you add balsamic to cut though but cider will do tbe same. Well done greg
Greg you going to check out a place call Goody's a hamburger place that started I believe in Tampa the year 1905. They made a secret sauce. When I was a kid that was my favorite hamburger. Eventually Burger King took over that spot it was in Rockaway New Jersey. I'm in my 50s so is a treat not a lifestyle.😊
I would personally cook the Pancetta on its own, drain the fat, use it to cook the mushrooms/onion. Like you said, it's very fatty. Adding olive oil might be over the top. Always can mix the salad with a bit of olive oil if the taste of it is missing.
Still looking for that Chili’s copy cat… Alex’s Santa Fe burger. Other than that, artistry on this burger. Sure looked good… too bad I don’t like mushrooms… it’s a texture thing.
