If espresso is not good at 1:2 ratio and you need to decrease the water percentage then there is a problem in somewhere. 2 times extraction is usually kinda standart extraction in modern espressos. 18gr in and 36gr out should be in 25-30 seconds window except turbo shots. And it shouldn’t be difficult as that. In home when i try new beans i can make it 1-2 or max 3 attempts.
