    I just changed from the pitboss 1230g to the pitbiss series 3 cabinet, gotta keep a close eye on fat and other build-up around the bottom on these as their oil and fat draining is pretty much non existent, I made an alteration to mine and above the searing plate and between the grill plate I use a roasting tray full of hot water to catch oils but also inject more moisture to my cooks

  • @aamir122a
    @aamir122a 2 ปีที่แล้ว

    FYI, the internal temperature of the meat is usually half of the oven temperature; raw meat absorbs most of the smoke; here is the thumb rule, red meat starts at 120 C, smoke for 1 hour, then turn up the heat to 150 C, for 20 minutes, the internal temperature should be 65 to 70 C, finally open the grill and reverse sear for 1 minute each side ( Medium stakes ), for well-done keep at 175 C for 20 minutes. This recipe requires a meat tenderizer; use kiwi fruit or green Paw Paw.

  • @scotty311
    @scotty311 3 ปีที่แล้ว +1

    Hey bud, i have the same smoker, had it for a while now. A little too much rub for my liking on the ribs. But that's how you do yours. I smoke them for 3hrs at 120c, spraying each hour, then wrap (foil) and put them in the oven (not the smoker) with butter and apple juice for 2hrs (120c), remove from foil baste on choice of sauce and put back in for 15m.. all done.. you'll enjoy perfecting your meats to how you like them. Well done.. Looked great.

    • @Australian4x4Adventures
      @Australian4x4Adventures  3 ปีที่แล้ว

      Hahaha. Yeah first time out of the gates doing any sort of rubs or smoking so I had no idea how much to put on.
      I liked it like that but done some steaks a few days later and found out I really don’t like much rub on those 😂
