    Man Rus, that was the perfect day to do a chili recipe!! Crappy weather always makes outdoor cooking more fun and the food taste better in my opinion!!! That Dutch Oven set up is very cool!

      It sure was, and just happened to turn out like that. I really didn't want to shoot a video outside with all that cold rain blowing around, but we protected the cameras and gear and let it roll. I was more than ready to dive into that chili after being out side for 3 hours in that cold windy mess lol! I'm really loving the Camp Maid setup. Can't wait to show what else it can be used for.     Rus, I really am super impressed by the amount of work you put into drying and processing your chile peppers, and measuring the correct amounts based upon the heat and flavor they impart! I could never do all that! The Camp Maid products look so solid. They exude quality! Your chili looks amazing... out of this world!! WOW!! Great job on all fronts my friend!

    WOW RUSS!! great looking chili. i'm gonna have to try this. you're right though. trinidads are HOT!! it was my first year growing them. also my laptop died but i've bought a new pc and plan on cranking out some good food vids right after christmas. thank you sooo much for remembering me. i'm looking forward to more vids.

    Rus thats a clever idea about putting the charcoal on top of the lid like that - Never seen the camp maid before - excellent all in one unit thanks for introducing it. Must have been cold out there. The steam coming off at 7:50 was crazy! perfect cook for a cold day!

I was in my back yard, but brother this is perfect for any kind of camping trip or outing. Yes, that cold front was bearing down on us fast and even colder today. We have high humidity down here on days like that, and it feels twice as cold as what it actually is. I can eat chili either way and have made it both ways, but with beans is the way we have always made it here, plus it really becomes a one pot meal and very filling. I'm going to be doing more videos using the Campmaid in the next several videos as well as other cast iron related and campfire items I have. Hope you check them out.       I'm about as far south as you can go without living in Florida, and it's been another wet blustery day again to day, and it never got below 34°F, but the wind was blowing fierce. I just don't think I could take those sub zero temps. My goodness, how do y'all do it?

    So many things an amatuer might ask, "why unsalted, why mexican beer, would american beer tasts different? Why did you use a ladle instead of a spoon???!!! Lol. Cooking is all about feeling it. Too many people out there that wanna watch a TH-cam video or two, and be able to cook the "perfect meal."

    Pickled serrano peppers? I think fresh would be a better way to go, IMO. Other than that..... good recipe.

    Hi Rus. Boy your camping cooker was super cool ! I have seen that meat at the store and wonder what to do with it and now I know. Ever since I saw the first photo of this yummy chili I have been craving it so bad. It looks amazingly great and I feel strongly that beans belong in the chili. That meat is great for chili, stews, soups, etc. Yes to me chili just isn't chili without beans, plus they really help fill you up for full hearty meal. Yep that was the back yard.     Thanks for breaking several so-called "competition chili" rules especially, the Texas variety. A lot of those competitions seem to restrict the competitors to three ingredients--beef, water, and chiles. How creative can one be with those rules? I like your recipe. Everyone raves about my chili and it contains a mile-long list of ingredients including "BEANS!!" Keep up the good work.

      I guess when Texas chili was born, there wasn't much available to kick the dish up with, so they did the best they could with what they had, but times have changed a lot since those days, and most anyone has access to just about anything that grows to add into their chili or any other dish for that matter. I'm with you about not being able to be very creative with just 3 ingredients going into a chili. I'm 58 years old, and I can remember so well my mother making chili every winter when I was a child, and it always had beans in it. I loved it then and I love it now.     Great cooking unit. I have heard more than once, that cooking an acidic ingredient, like tomatoes, in cast iron brought in an unpleasant flavor to the dish. So I have always cooked my chili in a non cast iron pot. And never an open flame cook out doors. Always on stove top or crock pot.. I may have to try a different cooking method now! Thanks.. We are below zero here now. So it might be a while.

      Yeah, it's a real compact unit and perfect for camping. I've never heard that before about acidic ingredients in cast iron bringing an un-pleasant flavor, but I think my chili debunks that myth lol! The reason I say that, is because I made another identical batch this week in a stainless pot and it was good, but not as good. I personally think everything taste better cooked in cast iron, especially the well seasoned ones. Wow, sub zero! I can't even imagine! Thanks for watching!

    hey now I love that fold up chimney starter , the whole kit is so cool. it will go right along with your camping videos as well. I like how you seasoned it with what I like to call a homemade "deconstructed chili power" you broke down the ingredients to a great homemade powder and added them all to the chili along with some premade powders, talk about layers of flavor!

      I've got other plans for videos this month and next so there will not be a Christmas video this year. Sorry. Yes, you could use this recipe for hotdogs, but I would leave the beans out, and thicken it with a corn starch slurry so it's much thicker for a hot dog. Thanks for watching, I appreciate it!

      I put a lot of time and effort into these videos and these videos tell you everything and every ingredient you need to know. It is the recipe. Just pause and take notes. If I had a ton of time to do a printable recipe, I would, but I seriously invest a ton of time into the actual videos and present them in a way that you can easily follow.     Hi Rus,
    Really love this video and the looks of the chili. All those heat peppers are my brand of fun! Quick question. We don't use alcohol to cook with or otherwise, and I'm wondering what you suggest as a suitable substitute for all that liquid?

      Thanks, glad you enjoyed the video. So you know, alcohol burns completely out of the beer only leaving flavor, but it can be replaced with just water. Not as good, but will work fine

    Thanks for the video!! Just purchased the camp maid Dutch oven set up, along with the 8 and 10 inch ovens also. Looking forward to cooking with them. Are you going to make any more videos using the Dutch oven? It's going to be a new adventure for me.

      Your welcome, and congrats on buying the new Campmaid set up! Yes, matter of fact, we are going on a 4 day camping trip this week for fresh water fishing, camping and of course cooking. I hope to shoot up to 3 different videos, and I will be using the Campmaid in at least two of them I know, possibly all three, so stay tuned. :)

    Question - how do you maintain a cast-iron dutch oven? Do you have to season it like a pan?

      Most cast iron you buy now days comes pre-seasoned, but if you buy cast iron that isn't then yes, you have to season it.

    And now I can safely say that I'm glad I haven't picked up a Dutch oven yet. If I *had* one now, I think it'd officially be retired with the Camp Maid. All of that innovation... Amazing. This video gave me several "why-didn't-I-think-of-that" moments, too!

      Not really complicated, but there is some preparing in advance before you make this, if you make your own chili powders

    Chili with beans is one of my favorite foods, EVER!!!
    In Texas we fix it with beans.
    My chili is not over cooked.
    It’s all done in within 60 minutes, basically cooking time for browning meat and bean cooking time.
    I DO NOT use anything canned!

    That cooker looks really well built and expensive.. Never knew to let everything simmer for 2 hours before adding beans. Good deal. Looks so good!

      It's very well built and though out. The price really isn't that bad. I'll be shooting more videos soon showing other things you can do with this set. Yes, canned beans are already cooked, so you want your chili pretty much cooked before adding them in, and just go about another 30 minutes.
