Hutspot! I always make it with a twist. I don't boil the onions with the carrots and potatoes but i bake them with some butter, brown sugar and sambal. They become sweet and spicy. I mash the carrots with the potatoes and put the onions on top. Smoked sausage and bacon. Omg so good!

A childrens book I really enjoy as an adult is The Magic Tunnel. In this book two children take the subway to see the Statue of Liberty and wind up in New Amsterdam. The Magic Tunnel is by Caroline D. Emerson.

When I visited Holland in 2006, I think hutspot was the dish I wanted to try most of all (I remember asking my Dutch friend who I was visiting where I could order a "traditional dutch meal"--but I can't remember the exact name of it). I searched as best I could to find a restaurant that made it (I couldn't cook in the hostel I was staying at), but never found one. Whenever I remember my trip to Holland, I remember it fondly...but am a bit disappointed that I could never try that dish, as made by a Dutch cook. Maybe someday I'll go back.
You don't really see Dutch meals in restaurants. They are called stampots. You have them with many vegetables with mashed potatoes. Maybe your Dutch friend can cook them for you? Or maybe if you search on internet you find a restaurant, but it isnt really common here. Our restaurants have mostly other cultures food or just steak with salad and potatoes.

You should try cooking with Indian spices once and it's not all that spicy as it is assumed to be. And literally you just made cooking alone - a fun drama. Teaching us how you should enjoy your own company. Loved the video xD
