you have to write an expression of porosity with length(x,y or z distance) as dependent variable. you should be able to find it by clicking the downward arrow beside porosity in the cellzone porous option.
If you are interested in species transport then use VOF model(computationally cheaper) or Eulerian Granular model. And if you want to do a more complex problem like interaction of phases(phase change), then use mixture model.
