Have made this from the King Arthur recipe 4 times now and it is now my favorite bread. I divide into smaller rolls and reheat it in the air fryer to regain the crispiness. I am obsessed.
Tip - tuck a large dish towel in the drawer where you're baking and let it hang down over the lower cabinets so it collects the flour dust instead of having to clean the cabinet.

As I started chasing very holey open crumb breads, I started getting into sourdough and last year made probably like 200 loaves😅. I had to chill cause I gain like 10lbs, but I still make pan de Cristal every now and then, but now I make it with sourdough
I found this recipe at King Arthur Baking a few months ago and it is by far my favorite! I also started making my own butter recently. OMG! Fresh bread with fresh butter is the best!
I've come back to this Channel after a long time... I used to watch her videos when I was still in school. I don't know why her channel is like my source of comfort? And all of her food that she makes looks mouthwatering. I made some bread like that many years ago. It is best eaten shortly after it is made and with butter and a little black current jam. The nutty toasted grain taste goes well with the deep flavor of black current.

I have been making bread since I got married, 25 years ago. My husband loves bakery bread, but he hasn't been a huge fan of any bread I've made--they're good, but not what he likes. Chemo killed my sense of smell, being in 2016. It's completely gone now and my sense of taste is going. Plus I've been diagnosed with celiac disease. I don't know why I torture myself with these bad videos 😫 gluten free isn't good at all, and it's ridiculously expensive to buy the ingredients.
Queen you should try Pan Sobao, it’s a soft, dense sweet Spanish bread, they have it every where in Puerto Rico and it’s delicious with a cafe con leche!😽

Thanks and I did make this recipe. According to your link it was a 2 parts flour to one part water which is I think incorrect as my dough didn't look as wet as yours so I added an extra cup of water. The bread turned out great and was chewy and crunchy just like Chibatta but I had to remove it after 15 min in the oven as my parchment was smoking. Next time I will try to just bake it in an oiled pan without the parchment.

Big Bowls Yes! Great way to easily control a mess. Use too small a bowl and you're stuck trying to avoid slopping your ingredients all over your counter.
That is type of bread you grab some tomato slices, avacado, bit of Mayo, drizzle of oil and a dash of basil with melty cheese all over it🤤 now the kids have after school snackies and morning toast! I’m so jealous! When it comes to baking in general, I’m no good lol
Divided in six instead of four, those would be perfect bread bowls for soup. Or cut the top off of one, fill it full of Fonduta, or Quesso, and chop the others up for dipping. Like you said, it takes all day but really only 5 or 10 minutes at a time. I don't think that I would bother for myself but excellent for a party.
My family still has the daisy printed Pyrex set. All of the sizes. I think they’re over 25 years old because I’ve had them for as long as I can remember, and I can’t remember before age 5 lol
I wasn't surprised when a 1:1 ratio dough successfully made bread, that's what my sourdough starter is and I have baked blobs of it into bread, though honestly it's really better as pancakes... I regularly use 80% hydration for my sourdough loaves and that first stretch-fold is always so messy, then it's almost like magic as the gluten forms and it starts to hold its own.
You seem like you know what you're doing so I need to ask a question: Emmy says she 'adapted' the KA recipe, but I'm not seeing where she says 'how' she adapted it. I followed the KA recipe today (from the KA website)and my flour to water ratio was no where near as wet as Emmy's dough after mixing like she did, so I added an extra half cup of water. (I promise I initially measured the flour and water exactly according to the recipe). When I did the 'coil' folds my dough wasn't as smooth and glossy as hers either. My loaves tasted delicious, but they did not rise as high and didn't have as many nooks and crannies. I"m fairly new to bread-making so could use some tips. Thanks!

I have a video suggestion! With eggs being so expensive, I think some viewers would be interested in learning how to substitute eggs with other things. For example, you can use flax seeds as a binder in baking or you can use tofu and a pinch of Indian black salt to make tofu scramble.

Hi Emmy! I recommend about 12% protein content of flour. Usually you have to add some gluten therefore. And beware of paper at 500F in the oven. It will burn for sure. Dont know what you did use.
Try the old dough method to improve the flavor of your bread! Start by pinching off a golf ball-sized raw dough every time you mix a batch, then store this piece of dough in the fridge covered properly, and continue with the rest of the process. For your next batch, mix this "old dough" into your new dough thoroughly. At the end of the mixing, take/store the same size dough before you divide, and keep it again in the fridge. Do this over and over until you get used to the old dough routine. I promise your plain instant yeast-leavened bread will turn out better, without the need to maintain an actual mother starter.

In my area, second hand shops have been pricing vintage Pyrex pieces at prices higher than what they’d have been back when the piece was new 😩🫤. If I’d have found that beautiful bowl at a Goodwill type store within 150 miles of where I live, it would have cost at LEAST $20🫣

Avocados have a lot of fat in them. To combine them with mayo is not good for you.

When working with slack dough I use 2 containers and flow/pour it from one pan to another. Works like a charm.

No flour already has sugar in it.
Bread flour has enough starch for the yeast to eat and grow. Plus all the resting time allows for more yeast to grow.
