- 1) 潮州芋头桃粿 Teochew Yam Kueh
Dough 面团 :
300g Rice flour 粘米粉
65g Tapioca flour 65克 木薯粉
50g Sweet potato flour 50克 番薯粉
700ml Boiling hot water 700毫升 滚热水
50ml Oil 50毫升 油
100ml water 100毫升 水
1 teaspoon Salt 1茶匙 盐
Ingredients for Yam 芋头配料 :
2 Garlic, minced 2粒 蒜头, 切碎
800g Yam, shreds 800克 芋头, 切条
100g Dried shrimp, diced 100克 虾米, 切粒
20 Shiitake mushrooms, shreds 20朵 香菇
½ teaspoon Salt ½茶匙 盐
½ teaspoon Pepper ½茶匙 胡椒粉
1 teaspoon Fish sauce 1茶匙 鱼露
1 tablespoon Light soy sauce 1汤匙 酱青
1 tablespoon Shallot Oil 1汤匙 葱头油
2 pieces Banana leaves 2片 香蕉叶

Thank you Sister I love Tao Kueh. I am Teochew too. My late Grandma n Mom used to make these Kuehs. I Also love Kueh with Green Beans filling and eat with Braised Duck Sauce.

Recipe looks good, but you need to edit the video down to no more than 10 mins if you want a bigger audience. Few people have the time/patience to watch a cooking video that takes almost 1 hour, or worse, have to replay it (2 hours total 😱) just to catch the instructions.

I had tried many recipes and did more then 30 times and so far the dough still abit hard when the kueh was cool down. I think your recipe have more water and less tapioca flour portion and i will try one of this day. Hope it will be solve the skin problem that I face.

Hi, greetings to you. This morning I trued making, I follow exactly the dough ingredients, 300gm of Rice flour, 65gm Tapioca Flour, but of salt and pour 900ml boiling water onto the sifted flour. Stir with a wooden stick.
The dough looks firm, and l leave it to cool for about 45 minutes. Thereafter, when I add the 50ml oil onto the dough, follow by the 100ml water, bit by bit, my dough becomes very soft. And by the time I add half of the 100ml water, my dough texture is runny. It is not firm at all like your video.
Then I tried adding a bit more of the Rice flour into my runny dough mixture, but it is still runny. So I throw away everything, and ended up can't make any Teochew Kueh! 😅😅.
Can you please enlighten me what could have gone wrong with my mixing?

我有两种做法,可以放也可以不放蕃
番薯粉加了,隔天拿來煎会比较脆。
