this is my all-time favourite sandwich recipe. it's loaded with protein and nutrients! using gluten-free bread makes it all the more guilt-free! if you've never tried a chickpea 'egg' sandwich, now is the time!!!

✨Ingredients ✨
oil-free, creamy cashew mayo
1 cup raw cashews (soaked in hot water for 45 min)
1 1/2 limes juices
2 tbsp apple cider vinegar
2 tsp mustard
1 1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp pink salt
1/8 tsp turmeric (for colour)
1/2 tsp black pepper
Water to thin
Sandwich
cashew mayo (or store-bought mayo)
chickpeas
fresh dill (chopped)
lettuce
tomato (sliced)
1/2 red onion (small dice)
GF sourdough bread
Optional (add before “closing” sandwich)
hot sauce
kala namak (black salt - “egg-y flavour”)
Directions
1. make mayo (if not using store-bought)
2. toast bread
3. rinse, slice & chop veggies
4. mix mayo, half-mashed chickpeas, fresh dill & red onion in bowl
5. Layer remaining veg on toasted bread, add chickpea-mayo mixture, enjoy!
