There are different kinds of simit. You can see different simit in every city in Turkey. There are even simit without sesame seeds xD (in Rize). Street simit, bakery simit etc. You can drink ayran or tea with simit. You can drink pickle juice with simit in Bursa. If you haven't been to Bursa, you should come to Bursa.
You should visit Eskişehir which is very close to Ankara and widely known as a student city. It is a vibrant, safe and lively place often considered one of the best cities to live in Turkey.

Ankara simit is way different than istanbul simit. Because they are 2 different things actually. Ankara simit is more fluffy and flavoured which you can eat it for breakfast instead of bread and specially with tea. In the other hand Istanbul simit is like a snack where you can have it afternoon with ayran or any other cold beverages.
The salad sauce you're referring to is called "Şalgam," pronounced "shal-gam." It’s a fermented turnip juice. Its unique flavor makes it stand out. You can also enjoy it as a beverage, and it's widely available. However, finding a good-quality one can be a bit tricky. If you're interested, I recommend trying the "Ali Göde" brand, which is known for its quality. Some places might have it for sale. and gotta say it is super healthy.

The red salad dressing in the meze place is actually şalgam, a fermented red carrot drink. People enjoy it as it is or they pair it with rakı.

You should try Hünkar Beğendi if you love Eggplant that much. It's a cheesy smoked eggplant bechamel with a beef or lamb stew on it. Nice video mate.
