Distilled water boils at 100° C (212 F) only at sea level, depending on your altitude the temperature will vary. Next time use a well calibrated thermometer like a thermapen as a comparison
Water boils at 212°F or 100°C at sea level. However at higher altitudes it boils at less temperatures. Are you well above sea level? Could that explain the 210° reading? However, water freezes at 32° or 0° Celsius everywhere.

Tests were done at 700' above sea level, in Indianapolis, Indiana. I don't foresee any trips to the beach where we'll be testing thermometers in the future, but you never know.
Bought this model because my old thermometer broke and I needed something quick. Honestly I cannot recommend even for the price. Slow and annoying to use. Small gripe but who's idea was it to make the change from Celsius to Fahrenheit a press and turn off a hold on the same button. You are going to be turning it on a lot more than changing the unit, should have been switched. Durability is also an issue you get what you pay for.

We’re located in the Midwest United States in Indiana, so I don’t think sea level was the culprit with this one. Great idea though!

ok so I'm at 4:48 right now and all I can say so far is you didn't calibrate the thermometer.
Ice water is not frozen. Water freezes at 32 degrees, but ice water is around 34-35.

I think as long as it holds up will be great for the price. I don't need a $80 thermometer to check temperature of meat on my $100 grill
