    Perfect timing! I'm planning my next set of cookies right now. I think this is really the key to getting good results. My last batch of icing was probably my best one yet, but I definitely need to continue working on this. I'm always afraid of thinning it out too much and end up with icing way thicker than it should be.

      I find the more often I do cookies, the better my consistency is. When I don't do them for a while, I almost forget what it should look like in the bowl and it's too runny or too thick. So having a good idea of what your icing should look like is key but then practicing to get it right and make sure it works well for you is also super important! If it's ever too thin or too thick, always remember you can add a touch of water or icing sugar and re-bag the icing to make it work better!

      You can put it in the freezer and just give it a mix with a spoon or massage the bag if it's still in the piping bag!

    Love your videos! I think I have the flood down. I'm struggling a bit w piping consistently. When I do a line, it wants to lift w the bag and not lay down if that makes sense. So at the end of my lines I'm getting little lifts of icing, even though I have no pressure on the bag. It's like the icing doesn't want to break. Does that mean it's too thick for piping? Thank you! I'd love a video devoted to consistencies. You are the best!!!

      It could mean it's too thick (but not always). Thicker icing is more dry so it doesn't stick as well. I either put a touch more pressure when I finish a line to push the line on the cookie (like sticking a sticker gently may not stick but pushing it on would make it stick) or wipe it off, so when I am almost done a line I sort of wipe the tip off on the cookie so it sticks that way and instead of lifting my bag up when I finish the line I move it sort of sideways/down.

    I have been enjoying your Channel but I do have a question how long can you keep your Royal icing at room temperature before you throw have to throw it away?

      I find after about 5-6 days it doesn't work as well. It doesn't necessarily go bad it just separates and you can mix it back together, but the consistency changes after too many days!

    I have a question: When is it better to use paste, gel, or droplet/liquid coloring? It's not just the intensity of the color. It's also how much liquid the colors add to the icing's consistency, right?

      Correct! I personally prefer the gel colours, although some can be a bit liquid, they are more concentrated and don't change the consistency too much unless you're going for darker colours that need more gel added. I always colour my icing first and then thin it down with water so that I don't thin it down too much adding colour after!
