Easy and Moist carrot muffins.You will never need another recipe!!

Ingredients
21/2 cups flour
3 cups carrots
3 eggs
1 cup oil
1/4 cup sour cream/buttermilk
1&1/2 cups muscavado sugar/soft brown sugar (I use 1 cup)
2 Tspns baking powder
1 Tspn bicarbonate/baking soda
1 tspn cinammon
1 Tspn ginger
1/2 tspn nutmeg
1/2 tspn salt
