It looks nice, however, tamarind is not an ingredient of a Madras, Cinnamon, Star Anise, Lemon, Methi, Bay Leaf,, nigella seeds, Cardomon pods, cumin, turmeric, fennnel seeds, and Kasmiri Chilli powder are.
Taste of India Madras Powder hits the spot. Tamarind can be used as a souring agent in anything you like and is more authentic to lemon juice in Tamil Nadu where the dish doesn't event exist 😋
I agree, it's definitely the odd one out from all the other ingredients. I just find fresh tamarind so long winded to use (extracting the seeds, soaking & blending).
