You should certainly gaze at the demand locally. And whatever cuisine you feel is in most demand, you should start with that. Ultimately you should be confident about the cuisine you are starting with.

I am from North-East. I didn't speak Hindi 😅 so it is hard for me to take his words but understand. He speak super fast. The reason i listen to this is my family runs small hotel since i was 3 yrs in a 200+ square feet apprx area near side road. My parents were old & illiterate. They don't know how to study market, branding & how to do business actually but my mother got skills of cooking pretty well. Cooking well works earlier time. But nowadays i can say it was all depends on customer satisfaction. New things comes up in many ways. Just like the person said my mother also feel Saturation when better one comes up. She doesn't know how to maintain P & L. From this new year 2025, i want to continue this food business. I just finished Master in Botany this August. My close friend were also scolding me why i didn't continue Ph.D. But I had taken the risk to continue the Food business.

If you create an average product, you’ll have many competitors. If you create a good product, there will be fewer. But if you create a superior product, you may have hardly any competition.
This economics may be possible in north india I have friends running a small restaurant n economics vary so much Even big restaurants arent doing 800₹ ticket May be filter coffee, rameshwararam, idc may be doing this 800₹ in indiranagar bangalore Not possible in tier 2 or 3, i know of a big restaurant in tier 2 spent almost 3cr on a restaurant n not able to do this kind of revenues im told they r struggling to do 10k revenue per day n its a huge tourism hub

Amazing vedio but I want to know how to retain shef or helper because we can grow their salary upto a certain level like 15k to 25k. But after 25k we can't grow their salary as the work they are doing can't match their salaries.
Actually in india food outlets should be in line with what is seen in japan,a proper place designated for such business with govt provided plug and play power and water connection.

Please note the food trucks which you see on mumbai pune roads are not licensed. No changes are allowed on trucks police can charge heavy fines.Even Gas is not allowed in the foodtrucks only electric. Most of the people do not tell the truth. Only very few companies have full license
Changes are definitely allowed. You need prior permission from RTO. N there's no rule that says that can't put gas cylinders. Please don't mislead others. Also there's a simpler way of doing it on a trailer rather than truck. Zero RTO complaince required.
