Ingredients:
630 g whole milk, fridge-cold, to be divided (22.2 oz; 630 ml)
295 g heavy cream fridge-cold, 35-40% fat (10.4 oz; 265 ml)
90 g sugar (3.2 oz; 7 levelled tablespoons)
½ teaspoon xanthan gum (1.5 g)
200 g white chocolate/couverture, chopped (7 oz)
The steps at a glance:

4. Put in the freezer to set
