    Funny - I always get disappointed if I dont nail steaks just the way I like them but wife and family couldn't care any less. I feel ya on this one!

    Dry aged adds that unique depth of flavor and those were some good looking steaks Craig! Pretty cool cook on the little dude, I’m with you on medium rare but hey sometimes it happens that you go a bit over, still looked good. Have a great weekend brother and keep on grillin!

      Pickles BBQ You are right Charlie! I am amazed by how beefy the flavor gets. I will have to dry age a nice ribeye, since that is by far my favorite cut! Hope you weekend is great as well! It already started off good, my wife’s birthday is today and we did some live lobsters last night and I have a big filet for her and a big ribeye for me dry brining in the fridge for tonight!       meatthecook K. They had a great beefy flavor. I need to do this again, but I will do a larger ribeye. Since I chose the smallest strip, it worked, but once I trimmed it down, the steaks were small. Good Luck! Cheers!

      City Escape Griller I am surprised how much I use my Rec Tec, during the week it is just easy to push the button and get ready to grill something. The Jumbo Joe is a nice little grill and the price is very reasonable as well. I would recommend the SNS Charcoal basket and I just got the drip pan as well, but have not used it yet. We are planning a tomahawk shoot on both of these grills soon. We are actually shooting one on Tuesday, not sure which grill yet. Cheers!

      Char Griller LOL Dave! Save the bowing until I get the nerve up to do a nice ribeye instead of a cheap NY Strip! LOL It did turn out nice! Yes, the Jumbo Joe is a nice little grill, I just got the griddle pan by SNS as well. I will let Jack know about his production quality! Cheers!

      Jon Thanks! Yes, as soon as I knew I was getting this grill, the charcoal basket was ordered! They just came out with the drip and griddle pan for the 18”. Mine should arrive this week. Cheers!

    Good looking steaks, wonder if the dry age has something to do with getting done sooner than you thought? Still looked great. keep up the super content.

      Robert Hikade Thanks! I think the dry age could be part of it, but I think my biggest mistake was doing all sides, since these were small. I haven’t done enough dry age to see a pattern! Cheers!

    Do you not think or find that freezing steaks changes the flavor? I honestly don’t like frozen steaks. I’m loving your videos on steaks.

      Derrick Deweese I do not notice a difference, but to be honest, almost every steak I make was from the freezer. I usually by the whole Ribeye, Filet, etc... and it is vacuumed packed. As soon as I open the pack, do some trimming and then cut into steaks, I vacuum seal and put into the freezer. Also, if I am cooking a steak Saturday night, I will take out of the freezer Thursday morning, once they thaw, usually by Friday night, I then salt brine them and put back in the fridge on a rack until I go to cook them on Saturday. Cheers!

    NEVER FREEZ a fresh piece of meat if you plan to cook it soon.

      Yes, these were part of an entire strip roast that we dry aged, we cooked some of them right away and those were vacuum sealed and frozen for later. I still have one if the freezer! Cheers!
