One of my favorite tips is that I buy a large package of ground beef either on sale or at Costco. I come home and fry it all up. (Since I’m making the mess, I might as well get it all out of the way at once!) Once the meat cools, I bag it up in quart size freezer bags and freeze them flat. If the package was 7 pounds, 3 ounces, I just divide the cooked beef into 8 freezer bags. If a recipe calls for a pound of ground beef, we aren’t going to miss it if I’m only adding 14 or 15 ounces. Having this cooked ground beef has saved me from fast food many times. I can take it out of the freezer and dump the frozen meat in a pot with a jar of pasta sauce and have dinner on the table in the time it takes to cook the pasta. I can do the same thing with Sloppy Joe's or tacos.

This method also saves on cooking fuel and clean up. A year or two ago I started to pre-portion all of our meats, I got the inspiration from Kristen Stepp on What’s for Dinner? here on TH-cam. If I buy a large package of boneless skinless chicken I will cut some (raw) into cubes for stews, pot pies and casseroles, some in strips for fajitas, some into small bits for soups, quesadillas, enchiladas or ála King and freeze in portions. Ground beef gets cooked up and portioned out or made into patties, then frozen raw. Whole pork loins are sliced for boneless chops, cubed for chili verde and frozen in meal sized roasts. Saves time when you get ready to make meals, which is a real blessing!

Morphing leftovers into a completely different meal:
    1) Chili can be served over spaghetti or hot dogs, baked with a cornbread mix, or made into Frito Pie
    2) Potatoes, onions, sweet potatoes, carrots, celery, etc. left from a slow-cooked roast or chicken dinner can be pureed with milk or broth for a roasted vegetable soup with breadsticks
    3) Tonight’s fish and chips is tomorrow’s fish tacos
    4) Leftover bits of meat, veggies, and herbs become loaded fried rice with a scrambled egg or two
    5) Why bake 4 potatoes when you can bake 12 in the same time - top with shredded meat, BBQ sauce, and cheese one night, chop them up for quick fried potatoes alongside pancakes or eggs, or use them for an instant loaded baked potato soup with milk, cheese, bacon, any leftover veggies, etc.
    6) Leftover chicken can become a swanky Italian antipasto salad with some fridge staples: olives, sliced banana peppers, salami/summer sausage, red onion, tomato, cheese and Romaine with a vinaigrette
    7) Save the bones and a bit of meat from pork chop night - simmer bones in water with some bouillon, strain, add frozen wontons and the tiny meat chunks for take-out-style wonton soup topped with scallions
    8) Pulled pork on rolls one night becomes “Asian taco pizza” the next: a large plain cheese pizza becomes hip with BBQ pork, pineapple, red onion, and cilantro and/or scallions
    9) A deluxe pizza to serve many can also be made from 1-2 servings of many meat & veg dinners: enough fajita stuff for someone’s lunch can be an entire pizza’s worth of toppings or break up those last two burger patties for cheeseburger pizza topped with bacon, lettuce, and tomato
    10) A big batch of beans can become pinto bean soup, refried beans for huevos rancheros, and bean & cheese burritos

All great ideas! I keep a bag of ‘bits’ in the freezer, that handful of leftover peas, spoonful of leftover corn, and whatever else. When the bag is full, it’s time to make soup. Also save the liquid from canned veggies and freeze for veggie ‘broth’ in soup making. Carrot peels, onion butts, potato peels and such go into another bag along with chicken bones, when bag is full, cook up some broth!

As a divorced mother of 3 sons( now grown)
I learned early on from the women I used to work with about stocking up and getting prepared for the times when my check was short or an unexpected expense came up. I would work an extra job to make ends meet. Even after my kids grew up I continued to get prepared for unexpected circumstances.
When the pandemic hit I had most everything I needed for a couple of weeks so I didn't have to rush out for toilet paper or anything else.
Thankfully my kids were prepared too!
We would just sit back and watch the rest of the world forging for their needs. It was a scary feeling but also a relief to know that our preparedness paid off! It was a blessing and a lesson learned!! I'm always looking for new ideas and appreciate learning from others!

Living in the Netherlands 🇳🇱, our eating and grocery culture is a bit different. But the saving tips are the same: do mealplanning, buy in season, go for deals on things you really use. Use websites to find recepies that incorperate the sale or seasonal items. And because we are the two of us, we know our measurments exactly: how many grams of pasta or rice, meat, vegetables, potatoes, etc. per meal. Allmost all of our meals we have zero leftover or waste. I alter recepies to do so.

With a lot of shortages rumored (gas, fertilizer, aluminum, etc) to be coming I think it will get bumpy, especially if we aren't preparing. I really think now is the time to learn to grow and preserve your food. Most people don't realize that it takes months to grow vegetables in the garden and years for fruit trees to be able to grow fruit.
We have a 1 year food pantry. Years ago I learned different ways to preserve foods. This past year I have been learning to turn my brown thumb to a green thumb. Over the last year I have been learning how to grow vegetables from seed and kitchen scraps (using vegetable cuttings). It definitely is a skill. My next skill to learn is how to make organic fertilizer using compost. :)
Gas powers a lot of things including farming equipment, trucks hauling food to distribute, etc. Fertilizers the way we currently use them will be scarce, so we should learn how to make organic fertilizers using composting. Aluminum is used for a lot including making cans for canned food. I think that could change down the line to be another material. Those are just some of my thoughts on it.

    • @brg2743
      @brg2743 2 ปีที่แล้ว +5

We compost and it is easy. We started in plastic tubs. This is an easy way to begin. We didn't drill holes in them. We use the lids. Potato skins, veggie and fruit peelings, some coffee grounds, tea bags, eggshells (washed out) and leaves (save several trash cans full in fall). Turn weekly. It takes about a year. We sift it. We just got a turnable composter and it is so much easier. Plastic tubs helps you see what is happening as you turn it though. We do not water ours, because the peelings are the nitrogen(wet stuff). The leaves are the carbon. It takes practice, but like gardening, it is fun to learn about and be self sufficient. Good luck with it. Really changes the soil and helps the plants.

Elie, some organic fertilizer can be made with frequently used, inexpensive and waste items. I use chopped banana peels, crushed & dried egg shells, used coffee grounds, human hair clippings and epsom salt at planting time for tomatoes and peppers. 1 tbsp of each to each planting hole.
I found it useful to journal each plants required nutrients and Google searches to find organic fertilizer.
The least expensive purchased fertilizer is fish emulsion. I make a cold compost pile, less active work by turning once a month. This way takes quite a bit longer to break down, several months up to a year.
My thoughts are just doing a little bit piled up pays me back later in rich organic matter. I hope these ideas help. God bless!

The bonus of having master lists is that you can filter/sort your list to show things on sale first or sort from lowest to highest price or lowest to highest price according to weight. One of my Mother’s Day gift has been for the past years a large up right freezer GE over a $1,00.00 each … now I have four of them!
They have been placed in our garage carefully organized and they have been a blessing for my husband and I as we bless our dear family and those God sends us . It’s a good way to find organic foods for less and your videos lessons inspire me to encourage others as a way of life with peace and not panic 💝

My biggest tip right now is to find pallet stores! We have several in our town. Typically they have deals for each day! My favorite is on Mondays everything marked $5 and under is $1!! I’ve stocked up on a lot of things! The best is pads and tampons! Being a teen mom, it’s really helpful

I love the positive attitude of your videos. I had lumber delivered this week for building more shelves because I'm out of space (plenty of space in the basement, just out of shelving). Feeder pigs are growing nicely, another batch of laying hens are about ready to lay. I live where I'm still able to buy eggs at roadside stands. Most here only charge $2 but I've been leaving extra in the jar because I know how expensive feed has gotten. It's only me at my farm but my son's family is close. They call my house Grandma's Grocery. I'm wrestling with getting another freezer. I bought a 27cf and have 2 refrigerator freezers but thankfully they're all full. My hesitation is the fact that I don't have a generator.
Keep up the positive outlook Girl. You've taught this old woman some things. 😋

My grandparents were born in the 1800s. My father was one of the youngest (born in 1924) and he was 42 when I was born. I learned a lot from them. Here are some tips I learned and pass on without going into every individual thing. The number one thing to do is learn! Research, reach out to others and especially the elderly. You will get some great stories, learn some history, and importantly, they have a ton of knowledge to teach. Keep it all written down, printed out, or buy the books that would be to your benefit! Second thing would be to gather everything you need! Not just foods, but think about clothes (learn to sew) and medicines. Also learn herbal remedies, and grow what you can. Raise animals if you can and get good with people who have the resources you need (like farmers). Thirdly, not only preserve and store everything, but practice using the items! Lastly, always tell yourself you CAN! Take can’t out of your vocabulary and only use the word CAN…. Because everybody CAN. And we can help others who struggle. Keep faith in God and do your due diligence! Thank you for the wonderful video! Keep it up.. you have no idea how many lives depend n your knowledge!
Love from just a farm girl. Xx

You are such a valuable source of information ( and fun) and mentoring for young homemakers just getting started. If I was your momma I would be so proud of you. We use what is left for lunches. If there is more, we freeze it for later, eat it the next day, or reinvent a new meal for the next day. We try not to cook too much so there isn't leftovers though. We are all going to get really good at saving in any way that we can with this going on. When this supply chain stuff is over, we will know how to save a lot of money. We bought a canner and some jars too. Anything on pressure canning info is helpful. Did it years ago, but will be doing it again this year. Thanks for the video!

Saturday I usually go through and tidy the refrigerator and pull out produce and start planning from there. Maybe chop and freeze or plan snacks and meals around what needs used up. Sunday I usually cook up a few meals extra for the week. My husband works second shift, my daughter works 3 12’s sometimes more. I work 5 days a week and have to pick up my grandson by 530 so I don’t have time to do a lot of cooking during the week. I will if we need Tobit we mostly pack what I’ve already cooked.
Sometimes breakfast for dinner is a cheaper option, veggie stir fry or veggie soup to use up dibs and dabs. I purchased an organic chicken at Aldi last week boiled it with my veggie scraps I keep in the freezer, deboned, made 3 quarts chicken broth, 2 quarts bone broth. Made BBQ chicken (shredded), penne chicken ranch casserole ( left off the bacon! ). It was still good and chicken enchiladas. I had a bag of yellow rice from a dinner that was in the freezer so I mixed that with the chicken. Added frozen chopped jalapeños and red peppers that were frozen from last years garden since I didn’t have green Chili’s. Used up some sour cream, mascarpone cheese and other odds and end cheeses in it. Another inexpensive meal is to cook up some ground sausage and the add to the pan a small head of chopped or shredded cabbage and a little onion. Cook until tender and serve as is or over egg noodles. Filling and cheap.

I love how you are so calm during all of this. You provide great information. One thing I wanted to add was gardening. Gardening can be very overwhelming. But I am disabled and I vegetable garden. I use 5 gallon buckets to grow tomatoes in. I’ve grown green beans in them, beets, radishes growing in them. They are cheap and a bag of dirt will fill up one container and you can start small. It can be overwhelming but it can be done. Also, things that you would typically throw out like the radish greens. Or turnip greens. Those can be used as well. Beet greens. We often throw away perfectly good food. We just have to find creative ways to use them. But often times the whole plant is edible. Especially with root plants.

First of all I'd like to wish I happy Mother's Day to you and to all the moms out there! I am a dog mom but I'll take a Happy Mother's Day too. This is a great video. I am a one-person household with three small dogs that I support. I am 60 years old and disabled from a stroke 7.5 years ago. I'm fortunate that my house is paid for and I live in the midwest where the cost of living is lower than it is in some parts of the US. I have long been incorporating some of these ideas and I am looking to expand upon that as food shortages and inflation have come upon us. I was a child of the 1970's so I remember gas lines and high inflation. I have a small upright freezer now after having previously inheriting my mom's old chest freezer almost 20 years ago. As I said it is very small but I think it is adequate for what I need to stockpile. I have always bought extra butter and bread as well as frozen fruit and vegetables and kept it in my freezer. I used to buy a lot more proteins but with prices being so high I haven't been buying as much. Also last summer I lost power for 3.5 days so I completely had to throw away everything in my refrigerator and freezer and start fresh so I had not completely replenished from those losses. I really appreciated your video the other day about things you can freeze. I was unaware that you could freeze eggs and that's a game changer for me because I am terrible at buying a dozen eggs and then not using them up before I think they may go bad. So I'm going to start doing that as I have plenty of muffin tins that I can use and a food saver so that I can freeze them. I also belong to Sam's Club and I shop there for quite a few items but I always watch the prices. I no longer drive and it is difficult physically for me to get out and grocery shop so I rely on a Walmart W+ membership to get my regular groceries delivered. I had been using a regional grocery store chain but their prices are some of the highest around here and after a free trial on Instacart as well as using my local Kroger stores for delivery I ended up going W+. It was a little hard to put out the $98 but I ended up getting a bonus time with that so I got 18 months of membership and that is unlimited free delivery from the store so I think overall that's not too bad of a deal for my situation. In my area Walmart tends to have some of the lowest prices. Unfortunately Aldi is only available for delivery through Instacart and unfortunately Instacart's pricing model makes it too expensive to shop at Aldi. Right now I grocery shop every 2 to 3 weeks with an intermediate pickup of a gallon of milk. I'm working on getting a decent stockpile of some things built up but I'm frankly having a little bit of a problem finding some things. You are so right about keeping track of prices. Some things that I buy at Sam's have been going up and down just crazily lately. It'll be one price one week and you look two days later and it's up $5 or down $2. I'm not sure if it's an issue that they are watching what Costco's prices are and trying to constantly out price them and vice versa. As I said I belong to Sam's Club but my next door neighbor, who's also single belongs to Costco so we share the memberships between us. She basically goes to each of the clubs about once a month so we can each take advantage of sales as well as products that one club carries that the other doesn't. I really appreciate your advice about not panicking and also that if someone is having difficulty please reach out as there are resources available even in the smallest communities. You should not have to go hungry.

Happy Mother's Day Kimmy. Tysm for this video, it's so helpful. I used to buy in bulk every three months. I still do non food items because I don't have room right now in a tiny house. But, I will do once again when I get my new home and have the space to store everything, I really did enjoy having a well stocked pantry. You, Becky and several other ladies have really been an inspiration to me in so many ways from gardening, homesteading, making freezer meals, to buying food in bulk, making bread, making my own seasoning mixes/gravy mixes and the list goes on. Again, ty and God bless you and your family.

All good info Kimmie! I've kept at least a 3 month rotation for 43 years. Only thing I no longer do is meal plan. We don't eat much as seniors and pretty much do leftovers several times a week. But I always have meals in my head and the ingredients available. That way if kids or grandkids stop by and can make larger meals. Nd I have freezer meals to pull from. Fresh items are the toughest. I garden, but things like lettuce and tomatoes for salads aren't cheap.

We had chicken fajitas the other night and had a lot of leftovers. Last night we made sheet pan quesadillas with our leftover fajitas. It was completely delicious and nobody would have known it was leftovers.
I still have a lot of Easter ham leftover. I have the ham bone and the leftover meat in vacuum sealed bags in the freezer. We really like to make pinto beans with the ham bone or red beans and rice with cornbread. We use the leftover meat to make ham and scalloped potatoes, a breakfast casserole for a quick few days of breakfasts or a hearty dinner, Hawaiian fried rice which stretches into lunches for work the next few days.
Another tip I utilize is leftovers make great lunches for work the next day. We carry leftovers and utilize the microwave in the break room at work. A fast food meal is $10 per person. We save at least $100 a week by skipping lunches out and taking our own plus we don’t waste food which we all know is super expensive right now. On nights we don’t have leftovers we pack a sandwich, a yogurt and a piece of fruit or some cut up veggies. I make homemade hummus and portion them into little individual dip sized Tupperware containers I found at Dollar Tree. I got 10 reusable ones for $1.25 that are also dishwasher safe. I prep the veggies on Sunday afternoon for the week and slice up peppers, carrots, broccoli and cauliflower and store them in sandwich bags to grab and go.
Another tip is prep your veggies you need for the week in advance. I feel like for our family at least when things get hectic and they do if we don’t have a solid meal plan with the ingredients already prepped and ready to go we will result to ordering pizza or hitting a drive thru. We try to only go out to eat for date nights, special occasions like birthdays and anniversaries and to celebrate accomplishments like my son getting all A’s on his report card or a promotion, etc.
Another idea we’ve been using to save money is since our son is a teenager now and out with friends more on weekends we turn to an at home date night when he stays the night with friends. We find a new recipe we haven’t tried, go to the grocery store together to get an odd ingredients we don’t have on hand if any and we cook it together. It’s a lot cheaper than a typical dinner out at a restaurant and we have a lot of fun, trying a new dish and cooking it together. Sometimes we even learn a new cooking technique or find a recipe we love so much it becomes a family favorite. Our rule is we have to try a recipe we’ve never tried before and wouldn’t normally try to expand our palate.

I have always had a budget for house and groceries and have been able to stock up my pantry by learning to can, dehydrate and freeze. However, I wanted to still not be so dependent on outside sources and the cost. This year, I noticed the huge chunk of money going out the door for body care. Our body wash went up to $8 from just $6 a couple months ago. Our deodorant jumped as well. Etc. This year, I researched and experimented on making our own body wash from a single 4 oz. Bar of soap. I have learned to make my own deodorant, antiperspirant. In the end it has been healthier on my skin than all the other products. I make bodywash for less than a dollar for a little over a half gallon. My deodorant is just pennies as well. If I had a big family this would save me so much money. Even though it is just my husband and I at home now, it still saves us $16 a month! I love it when you said, get uncomfortable, learn new skills. I have been doing that for the past 7 years, since I left teaching. I have learned to garden, preserve and so much more. Knowledge really is power.

Far as savings go on food use the discount card associated with that supermarket plus use coupons too. Kim, you always provide inspiration but this is the kick I needed. I just purchased 200 lbs of beef from a farmer and that helps so much because beef is so expensive even at Sams and Costco. I'm starting to purchase bone-in chicken thighs and removing the bones and skins myself because I can buy them at Sams for 98 cents a pound. Plus I get the bones to make chicken stock. I'm planning on investing in a canner and start canning my broths and beans - and I planted a garden. This is a time to be steadfast in our faith.

Great tips! Our food budget has stayed mostly the same but I have had to be more creative and very intentional. I shop at several different stores to put together our groceries for the month depending on sales. I have had to pass on items due to price and just make meals from what we have on hand and can afford to buy rather than what sounds good. We also use our freezer and buy discounted meats and a quarter cow. We use meat sparingly and add veggies/beans as fillers plus we eat more eggs now. We expanded our garden size last year as well. Our food storage (built up over the years) has been essential. It's all so exhausting sometimes but we just have to keep plugging along!

To help us save money especially in summer where we eat more fruits and salads, we have always had some form of a veggie patch. Most veggies don’t need a huge area to grow, we have grown lettuce / tomatoes / bell peppers / onions and garlic in pots as well as just the bags of potting soil.
You can now even buy miniature fruit trees with more than one type on it that grows in pots, personally nothing beats the flavour of homegrown things.

Hi Kimmy! Happy Mothers Day! Awesome video, very informative, we keep approx 4-6 month supply of food in our food storage and also have 4 freezers, one doesnt count because its in the kitchen to replace the fridges freezer since our fridge is ALL fridge with no freezer, we wanted a large fridge and it was the cheaper option when we were looking. We are currently in the process of extending our kitchen and building a walk-in pantry, we have combined our living room and dining room and taken what was our dining room to extend kitchen and build the rest of the area into our new walk-in pantry .... This last 3-4 weeks have been busy, my MIL is disabled and has dementia, we have been looking after her for the last few years and we can no longer give her the level of care she needs so were in the process of moving her to the nursing home, on the big day of the move we were tired and decided to pick up dinner, we live in a small rural community so only have a DQ and subway and whatever local restaurant to get takeout, we decided to get DQ and spent $52! for burger combo for 3 people, one of the people being 10yrs old, I was floored! apart from the burger combo we got some onion rings and they didnt even have lettuce for the burgers LOL! usually I keep burger pattys and buns, oven fries so usually make our own, I couldnt believe the price hike on very basic takeout meal ..

Same here! I learned years ago not to store canned item up high (heat) after one “exploded” and had to go to wire shelves and repaint plaster walls.
Now I keep paper goods at the top shelf ( wax, foil) and the canned are next to the bottom shelf. Boxed items do alright next shelf up..

I often turn my leftovers into fried rice. You can even use fresh rice by adding a tablespoon or two of mayo to it before cooking. The oil in the mayo keeps it from sticking together. You can't tell there is mayo in it.

I was watching the stock market news and they were talking about how Russia and another part of the world can’t quite remember the other area was talking of boycotting certain trades with us. This is causing less crops they were saying and that we can expect to see a shortage on rice, beans, and soybeans this summer. I truly believe this. They were stating that stock prices in those certain areas have plummeted. Places are hurting so bad.!

    • @heathersmeather
      @heathersmeather 2 ปีที่แล้ว +1

Oh dear, this isn’t good. I remember some sort of incentive last year for farmers to dispose of excess soybean and other crops that were going bad because there was no where to send it. 🙁

It's a good thing our southern states grow lots of rice. I only buy USA grown rice anyway. I try not to eat or serve soy (it's not good for men) and beans I can grow as can anyone, just grow em in pots if need be.

We spend approx $480/month for our family of 4, and 2 fur babies. That covers everything. Personal, animal, food, etc. We definitely do generic. If you struggle with your grocery budgets, learn to shop cash. We switched to cash early in our marriage. It helped me to learn sales cycles and how to not blindly swipe a card.

Thank you for confirming what I already suspected - particularly the idea that there is better ROI in a well stocked pantry than in a savings account. I am on a very tight budget, so I meal plan and have been slowly building up my pantry as the COVID wave hit us here in NZ. I'll definitely be checking out some more of your videos and audit spreadsheet and a more orderly approach I think would be super helpful to me. Thanks again for taking the time to provide this info.

Great video! I keep about a 3 month supply on hand. I think the best of these tips is willing to be uncomfortable. We buy very few convenient foods anymore and that has definitely saved us a lot of money. Even with inflation, I'm spending less now then I was 5 years ago when I paid for convenience.

I think it’s a good thing to keep a shopping list in your pantry. Once you have a comfortable amount in storage, every time you use a can of green beans, write a can on your shopping list to replace it (do this for any foods you use). That way you can hopefully maintain a full supply.

I do a series called Leftover Makeover where I share ideas I've had. Admittedly some things are hits and some are misses but they are always edible. This past week I made over some stew. I chopped the chunky vegetables into smaller dice, added in some leftover steak from another meal, made a little brown gravy to moisten the whole a bit more...Beef Pot Pie! It was delicious! My family has always loved Roast Beef Hash from leftover pot roast. I even leftover fried chicken, remove the skin and bone and use as 'cooked chicken' in pot pie, broccoli rice casserole, and as a pasta sauce. So many things can be used in ways other than how we see them initially.

I make a stir fry with lots of veggies, a pound of ground beef or chicken and a can or 2 of black beans. I only season it with garlic. I cook rice, or angel hair pasta, or rice noodles. At the table you can season it with soy sauce and other Asian condiments. The next night, at the table, season with salsa and Mexican condiments. The third night, I make a soup with all the leftovers, including the rice or pasta. My family enjoys this very much.

At our house we had a night we called Leftover Extravaganza! It started way back when our children were younger and did not want to eat repeats. I had to find a way to make it work because I do not throw out good food. Now, I pack and freeze leftovers and my husband will defrost and heat a meal from the freezer because he does not like to do any actual cooking just for one person.. He grills but will pass on the cooking. There is no waste and no one goes hungry!😁

Very good and informative video! These are definitely things that I'm continuing to work on and improve all the time. Sometimes my food storage gets overwhelming. I look at what I have and then try to figure out what to make. I need to check over the list of meal that I have and see if I need to remove or add some meals. We don't always have a leftover night of meals, but what I do is figure things I can make that will make leftovers so that we have them to eat during the weeks for lunches to take to work.

I love this! You have given great information Kimmy! Don't forget that if people have a Sam's Club membership or even a Walmart+ subscription they can have lots of canned and shelf stable foods shipped right to their house! A great way to compare prices, and have items they need to stock in their food storage brought right to their home! This is one way we stock our pantry with items like condiments, first aid, over the counter meds, canned and dry beans, broth, canned meats, paper goods and more. We really take advantage of this so that we can save on gas and not have to take the time to drive an hour to get to a warehouse club. Definitely worth looking into those memberships that are not that expensive over all when you can save somewhere else.
