How big of a problem would it be if I decided to use AC plywood on this project, rather than cabinet grade birch? I am not at all concerned with the look of this cabinet-just functionality. Thank you!

That was just a pneumatic brad nailer. Not absolutely necessary, but makes it faster and a bit easier. There are lots of alternatives - like just clamp and glue, regular screws with plugs or filler to hide the hole.
That project turned out great. That’s interior furniture quality. 👍

sorry for the late reply, I just have a regular cyclone hooked up to a shop vac underneath

So when it's dry, you take the screws out?
for the laminated pieces I typically do. usually leave a few of them though if they're not in the way
