I don't freeze completely, but do keep it very cold. Then I take the cold crust in the pie plate out of freezer/fridge, seal the inside bottom and sides of pie crust and put in freezer for a few minutes, about 3. I take it out and immediately put in the filling and bake in very hot oven. Crust turns out great! I recommend using those silicone pie crust shields (mine are red)that come in several pieces to adjust to the size of your pie. Those really help in making a beautiful crust! 😊
They should have blind baked the pie crust first to avoid a soggy bottom. I could see a thin layer of uncooked dough when the person cut a slice out of the pie.
