INGREDIENTS LIST (Serves 4)
1 Kilo Lamb or Beef
100ml Oil
800g large onions
90g Finely Chopped Garlic
1 tin of chopped tomatoes
1 tsp tomato purée
1 Tsp chilli powder
2 Black Cardamom
1 Tsp smoked paprika
1 Tsp Turmeric
2 Tbsp coriander powder
2 Tbsp garam masala
1 Tsp cumin powder
4 green cardamons
1 Bay Leaf
Cinnamon stick
10 green chillis
2 red mild chillies
Fresh coriander
2 Tbsp Greek or natural yogurt
2 Tsp of salt
1 pint water

I use mustard seed oil in every curry and it does make a difference in my opinion.
I think he wants to avoid using seed oils as this is now considered toxic. It seems to change all the time what is good and what is bad. I only use olive oil and ghee now. But only God knows what's right and what's not 😂

Hi Al cooked from scratch,only difference is I pressure cooked it. Fantastic family loved so rich in flavour and no base sauce thanks again Al 🇮🇪
I just made this, but with chicken. Phenomenal!! The depth of flavors was off the chart! Lots of chilis, but way more spice than heat! (I love heat, my wife doesn’t)!

At what stage did you add the chicken?
@@sirperegrineblack I left the onions and garlic sweat down 15 minutes more than Al did, then put in the chicken. After everything else was added, I cooked it for 45 minutes instead of an hour, then everything the same there after.

Bay leaf if your cooking authentic is actually an Indian bay leaf called tejpat. It's from the same tree you get the cinnamon from which is actually not cinnamon but cassia bark. It's from the same family as the bay tree but grows in India, very different flavours.

Brilliant, I’ve loved your 30 minute BIR series and cooked a lot of them , but this is definitely my style of cooking Indian food 🤘🏻 like you I’ve been a home chef for around 30 years and love cooking different cuisine, but authentic Indian is definitely my favourite , I’ve been to Goa 5 times and always quiz the chef’s for there recipes, keep up the good work Al really looking forward to this series 🤘🏻😎🤘🏻

We had this on Sunday afternoon after a day at our allotment. We used a beef joint cubed and it was the best curry I have made yet ! Tried a lot of Al’s currys and none have dissappinted ❤

Turnip curry...back in 1978 my father bought a book..Savitri Chowdhery Indian cooking...you can still get it...he made a dry turnip curry....incredible!....turnip is amazing as a stand alone side dish or added to your favourite curry dishes...it has a very earthy taste and lends itself well to turmeric spiced curry. Plus its super cheap to bulk out your currys (well better than potato) Try it , you'll never go back! And if you read this Al, please do a turnip curry video and you'll see what I mean 👍

Looks great and I will be trying this. Couple of tips I’ve looked up and used. If you use too much salt , throw in a potato it sucks up the salt. Also if the yogurt is room temp it shouldn’t split, but I really like your comment of letting it cool for 5mins . Also I have an outdoor induction hob so I’ll be cooking outside for this one 😊

Looks wonderful! Lamb's a little hard to get here in the American west, but it can be done. My favorite vindaloo is with lamb. That would horrify my father, a lifelong cattleman.
Do you have access to mutton instead perhaps? Never tried it but could get you close if you do 😊
@@benjaminthorpe7990 I've actually never had mutton. Lamb can be got here in the American west but it's very dear. Speaking of which, wonder how it would go with venison? My brother-in-law is a hunter who's always bringing it back.

Everybody needs to try mutti tin tomatoes it makes such a difference to the source trust me
Mutti is the king of tinned tomatoes. No additional ingredients, just tomatoes.
I'll second that, I use mutti for everything

Living in southern Spain. Bought the big pan you recommended and out here with a paella ring and tripod curry is bang on.
Got this simmering in the slow cooker. Didn't have a pan big enough, and you know bank holiday beers on the go 😂 Had some lamb in the freezer fresh from a friend's farm, it all went in bones and all. Will see how it turns out, it smells amazing already. I thought it was a bit overkill with all that garlic but it is a garlic dish I suppose. Nice one Al 👍🏻

Cheers Al. My favourite curry. There is a tandoori in Newington Green, 'Suruchi' and they do an absolute knock out Garlic & Chilli Lamb. Reckon this would be a decent home cooked alternative.
