Well since he was in the time loop he could only experience it once. Most of him died, but the last one (the one that actually got out again to live another day) hadn't lost anything. For him he just turned on the time loop, told Dormammu to stop, then turned off the time loop and left victorious.

Strange is Tony Stark levels of intelligent, I am not even joking and its consistent with the comic books too. Strange may be fumbling through most of the combat in the movie because he clearly is trying to prevent death not kill people and its portrayed pretty well and even exuberantly in some scenes making him look self righteous when its a character trait. Multiverse of Madness is going to show a different Dr. Strange I hope, one that is a bit more prepared with new and more powerful spells and strategies.
Ehhh. I like it more than most Marvel but there's some huge issues with it. I can't even remember the villains name (not Dormammu but his little pawn guy) and the pawn's motives are pretty shit. Like the man wants to end the concept of time, what? That makes no sense. Without time nothing can happen and functionally nothing exists and the pawn seems to just think no one will age anymore??? The pawn even claims the building frozen is "beautiful" but without him experiencing time differently relative to the building he wouldn't be able to appreciate it. Then Dormammu himself clearly is a... Entity made of stuff... Which requires time to exist to make any sense and if I recall correctly his dimension has no concept of time but he is clearly experiencing it so unless the combination of the two realities did that to him it's pretty funky (and even then that doesn't fully excuse the weird "no time" plot). But yeah I like the concept of the sorcer stuff but their depiction of what time is, is completely detached from what time actually is. I get it's a movie and all so it can be fictional and sci-fi but it should still be logical by the rules the marvel universe sets and it just isn't.
Your understanding of how time works isn't as complete as you think it is. In fact, the question of why time only goes forward is still an unsolved question in physics (in real life, not the MCU). It's part of symmetry breaking, if you want to learn more. The villains were bad in this movie, but it's not because their idea of how time works requires a suspension of disbelief. It just requires a little more knowledge of physics than your average lay person, if you're going to dive deep into its reasoning.
And then he apparently completely forgets how to use the time stone when Thanos shows up. Basically in a fight betwen people who can actually wield infinity stone whoever acts first will always win, and with the time stone you can ensure you act first.

Watch the scene again - Stephen's tone shifts with new iterations; if he had no memory he would always open with "I've come to bargain" with the exact same intonation and inflection, but he doesn't, he's making a statement that is accentuated by his determination emboldened with each death. Think about the nature of the spell - what good is a time loop spell if you remember none of it? You'd literally make the same choices over and over again doing nothing different. The whole point of the time stone is preserving the memories and conscious mind of the user even after performing manipulations of time so you can do things differently if necessary. If you were right, this would literally be the only time we've seen the time stone not protect the memories of the user.

The point about Dormammu just not being bound to the concept of time still stands, otherwise he would just reset every time ya know. I still strongly believe that Strange spent possibly hundreds or even thousands of years in the dark dimension with Dormammu until he finally gave in.
