Smokers aren't hard to make if you're at all handy, and don't have to be expensive. I've seen them made from big terracotta flowerpots, from old filing cabinets, even from cardboard boxes. Tutorials here on the tubez, you'll be up and running in no time.
That "Setup" is a traditional "Chuck Wagon". I'd bet that he's got the REAL THING - a genuine antique. The Round cheese is Italian Provolone. Philly Cheese Steak has two options : Cheese Whiz or Provolone.
Lyle I was the 200th like so cool and yes I have had these a lot the chief at the casinos I used to work at used to make them and omg so good but not like theses but very similar and omg with me working there food and drinks were half price to me so yum every tea time of steam and chips too 😂

You can make a technical smoker/BBQ with a metal oil drum, a small wood stove. Run the wood stove chimney into a hole cut into the side of the oil drum, cut off the side of the oil drum to make a door, attach a handle and metal hinges,, two 90degree angle steel, and a BBQ grate.

Chez-Whiz is heavily processed cheddar cheese. It is practical in some recipes like Queso or Rotel. I wouldn't use it on a Philly. Kent is the real deal. If you think a Philly Cheesesteak looks good, wait 'til you try one. Never made one this way but I would give a try. A medium sized grill can work for a smoker. You can smoke in a cardboard box!! So expensive equipment is not needed at all. Smoking is a little more involved than grilling cheesesteak.
You’d be surprised how well it actually works in a Philly cheesesteak if you go to Angelo’s pizzeria, John’s roast pork etc and of course the tourist traps that are Geno’s and Pats Kings of steaks you can find it but the key is the amorosos rolls or the liscios rolls that make the cheese steak well Angelo’s makes their own break but can’t go wrong with a whiz wit in Philly.
My son went to Philadelphia on a day trip (dirt cheap flight from NC to PA) and he was SOOOO excited to find a place that had gluten free Philly Cheesesteaks. He has Celiac, so finding something like that gluten free is a rare find.
