    Well I didn’t know you can skin em that way (and I like it!) But to be honest, I’m a bit scared of the morays coming to swim around my toes after say fish number 3 or 4..... I totally agree they are a great fish to fillet and eat.

      peter bellanto Working as a fish monger for 7 years we were always taught that water is a bare fillets worst enemy. Changes the flavour, texture and shelf life of the fillet almost instantly

      @@Smiley_B While saltwater is definitely the better of the 2, there is no benefits to rinsing fillets of fish in any water whatsoever.

      @@lukedfluke You have no idea. I think Smiley got you there. You are mistaking saltwater for fresh water. Dipping the fillets in salt water very fast would do nothing but increase the flavour. He simply raised any scales that were on the chopping board.
      While you have your 7 years as a fishmonger, I have 38 years working for AIFST, 5 of which were spent working on a $2 million government grant for the preparation of seafood. Just so you know, AIFST stands for the Australian Institute of Food Science and Technology.
