It's the high fructose corn syrup, beet sugar and maltodextrin which account for the diabetes epidemic 😊. And it's much better to add less sugar than to ever substitute sugar free. A lot of pecans on edges have nothing in them. I would have distributed butter mixture and chocolate to cover all of it or premixed the nuts, butter and brown sugar before putting in oven. But the idea is nice.
@@Tengokuchi High fructose corn syrup is worse. Different from corn syrup tho I’m not advocating for any of them. I have trouble with HFCS and when I do have anything sweet (I’m not a big sweet eater), I try to use cane sugar. I have trouble with fake sugar so I don’t use it myself but I use SF recipes and products for my husband. Mostly we just do everything in moderation and servings tho the holidays we do make special treats for family, friends and neighbors. 🥰🇺🇸
I think butterscotch morsels would be good for an alternative. I do think you were melting the butter at a little too high of a heat. All in all, I think I will try this. Yummy!

Drives me nutzzzz when people do NOT get the edges of the bottom layer with the toffee or the chocolate. All those extra wasted nuts. GO TO THE EDGES PLEASE.
I suggest lining the baking sheet with parchment. It will make it MUCH easier to get them out once they are cooled.
Makes it so much easier to remove from your cookie sheet.
