    As an indian food-lover I totally agree. It should come from turmeric (in the 'raw saunce') or from saffron soaked in hot milk, poured over the dish before serving. It is the traditional (and more healthy) way of doing it. But... this is a big industrial kitchen and as everywhere else in the world they cut corners to save money and time, but it is still wrong in my mind. I would pay them a few rupees extra to do it right if I was their customer.

    I love biryani and the food looks delicious. I don't have a problem with touching food with my hands when I cook but I wonder why that guy couldn't just use a spoon with a longer ladle while adding the sauce. It spilled everywhere, dirtied the pot and wet his hand. He is also wasting rice... it's not the end of the world but his mess seems so unnecessary.. I would kick him bad if he was messing my kitchen like that...

    because clay pots can withstand very high temperature... they are slow in absorbing and releasing heat and hence are quite heat stable...

    oh woww what an amazing way to cook chicken biryani.. pot style.. lol :) it probably mixed all the fragrance and it's true clay pots tend to store the flavour and the nurtrients better than steel appliances do.. :) great..

    Its basically a mixture of whole garam masala(cloves, cinamon, cardamom, bay leaves, pepper, black cardamom, etc, or u can use a store brought biryani masala.) along with curds, ginger and garlic paste, mint leaves, salt, chilly powder/paste, brown onions.. hope it helps..

    Ah Shah jeera (black cumin seeds). I never thought it was used in Asia, only the ordinary jeera. Shah jeera has a different flavor and I like it very much, but it is a little bit more expensive than ordinary jeera.

    Because most water tight Pottery is fired to much higher temperatures. The only way to crack it, to drop it or deliberately break it.

    Surely the cooking times are the wrong way round.....should it not be: cook on high flame for 5 minutes, then on simmer for 20 minutes?

    hay admin i to from warangal. if u want make such videos. first go to clean restaurant and good chef, where the kitchen is neat and ingredients used much less, wear hand gloves while cooking.
    after watching this video, i totally get rid of biryani.

    actually this dish is called "Muntha Biryani" and should be cooked on coal...but this video is a more modern version ..

    its similar to pasta.. you cook the rice and keep checking during the cooking process for the bite when u chew.... when it has lost its raw flavor and has a little bite to it, u can stop the cooking process...

    cook rice but not all the way check rice while its cooking feel the grain and when it semi soft drain the h2o. You can feel it by pressing on your fingers should be able to break half way. Hope it helps.
