      I've not found these exact ones in Norway myself, there are definitely corns but they feel and ferment and possibly taste differently.

    So except fridge how do you preserve for months

    • @TheAfroFoodDiary
      @TheAfroFoodDiary  3 ปีที่แล้ว +1

      Hello Queeneth,
      Keeping it in the refrigerator is for short term storage, like 1-2 weeks
      But then you need to change the water on the surface every other day. This will prevent further fermentation and spoilage.
      If you want to keep it for months there two ways I know:
      Put in zip lock bags and freeze them
      Or dry the pap and blend it smooth like a powder and store in air-tight containers
      If you want to see how I did it, watch this video,
      th-cam.com/video/2Cbhd6HlkCc/w-d-xo.html
      and let me know if you find it helpful.

    What kind of corn do you recommend for those that are in USA.

    • @TheAfroFoodDiary
      @TheAfroFoodDiary  2 ปีที่แล้ว

      Hello Bisola, I don't know what the African stores there might have, but there are a couple of grains you can give a try. Like Guinea corn or dawa and millet. But the one I used here is only Nigerian maize, and you can look for it in the African stores too. Be careful not to mistake popcorn for it though, except you don't mind giving it a try 😊

      Asking because then I’ll be able to tailor the answer to your location

    • @TheAfroFoodDiary
      @TheAfroFoodDiary  4 ปีที่แล้ว +1

      If you stay in Nigeria, you can fine them in the trade lines in the markets, the parts where they sell traditional stuffs like beads, clay pots, mortar and pestle etc.
      But if you’re abroad, you can check on amazon for a double mesh sieve (it’s a great alternative for that chiffon scarf. Then you can search for cheese cloth there as well, which will serve as the bag to draining of excess water later.
      I hope this helps you dear, feel free to ask more questions if you have. Have a beautiful day

    • @TheAfroFoodDiary
      @TheAfroFoodDiary  4 ปีที่แล้ว

      Hi, no, it’s different. Corn starch is the very processed fine and smooth one whereas maize meal is coarse, the type used in making fufu

    • @TheAfroFoodDiary
      @TheAfroFoodDiary  4 ปีที่แล้ว

      Sorry, I think I mixed up your question, where you asking about the final product of the process? The pap itself? If so, no, it’s not corn starch, let’s liken it to a porridge- it’s very popular in Nigeria. Makes great breakfast, we do not make it into powder like corn starch.
      I have a second video linked to this one, on how to make the same pap using dry maize meal (the coarse type)
      It’s also possible to achieve pap, with the use of the corn starch you’re asking about. But the consistency and taste of the Nigerian pap is best achieved following the exact method I used here.
      Hope this answers your question 😊

    Why do you need to change the water everyday, why not leave the same water for the five days you are soaking it. Any special reason?

    • @TheAfroFoodDiary
      @TheAfroFoodDiary  4 ปีที่แล้ว

      Hi Juliet, same question I asked years ago, it’s so the maize ferments gradually, if you don’t change the water you will end up with a horribly smelly maize and the pap’s taste will be affected too.
      So that’s the essence of washing of the old water daily
