I know this is an old video, but I saved it, thinking this would be a nice rainy day project. I finally purchased some wheat starch and made the attempt at cute goldfish for dinner. I changed up the filling though, because I am a vegetarian and so used a seasoned tofu and water chestnut version. Your method of flattening the dough was genius and the cleaver made it easy. I’ll freely admit my first few goldfish were a bit sad looking, but I did eventually get the hang of it and ended up with a nice plate of dumplings easily recognizable as goldfish. They were a huge hit and were both pretty and tasty. Thank you for this detailed tutorial.

Starch is usually gluten-free, so there's no need to worry about proteins. Yes, you can replace potato starch with corn starch. I've never tried using tapioca, though.

然後我有去找找義大利有什麼動物造型的食物, 有查到一種叫Ainuzzi在西西里島的起司, 會捏成小鹿或山羊的造型.
我覺得那沙皮狗冰淇淋他們會直接打電話給動保 🤣 這個金魚就已經是在挑戰他們的頂線了!但其實義大利很多產乳酪的地方都可以看見被捏成動物形狀的乳酪。可能只是捏個大概形狀沒太多細節,也沒見有人出來抗議過哈哈哈😆

Could these be frozen afterwards? Or beforehand? I want to try to make this before the end of this month for a birthday surprise.
I wouldn't recommend storing them in the freezer, as the starch skin will possibly crack during vapor cooking.
