    How to make Patthar Ka Gosht. Patthar Ka Gosht recipe. Hyderabadi Patthar Ka Gosht. Mutton Kebab Recipe
    Like many Hyderabadi dishes, Patthar Ka Gosht is a recipe that has royal origins. It is said to have been invented, when the royal chef of the Nizam, forgot his equipment while accompanying the Nizam on official matters. He therefore, improvised and used a marble slab to cook his kebabs. and thus, the Patthar Ka Gosht was born!
    Food Lovers’ Editor Kripal Amanna joins Chef Mohammed Iqbal, Sous Chef at the Novotel Hyderabad Convention Center, as he shows us what goes into the making of this iconic dish cooked over a hot granite slab!
    Here is an indicative recipe if you would like to try to recreate this dish at home.
    Patthar Ka Gosht Recipe
    (serves 4)
    Ingredients:
    500g mutton (boneless chunks flattened into 1cm thick slices)
    1 tbsp ginger garlic paste
    1 tsp raw papaya puree
    2 tbsp lemon juice
    1 tbsp deggi mirch (chilli powder)
    1 tsp mustard oil
    1tsp garam masala powder
    1 heaped tbsp rose petal powder
    1 tbsp potli ka masala
    1 tbsp pathar ka phool (stone flower) powder
    ½ tsp turmeric powder
    1tsp cumin powder
    1tsp coriander powder
    Salt to taste
    Refined oil as needed.
    Ghee to finish
    Method:
    1.Mix the mutton slices with all the ingredients, except the refined oil and ghee.
    3. Massage this masala into the meat and set aside for 45 minutes.
    4. In place of the stone, heat a cast iron skillet or a heavy bottomed pan over medium flame.
    5. Grease the pan with oil.
    6. Grill the meat until it forms a brown crust on both sides and is cooked through.
    7. A few minutes before taking the meat off the pan, pour ghee over the top and allow to cook.
    8. Serve hot.

    My 1st time eating Indian food was at Novotel Hyderabad. It was so good I almost cried! It's hard to find good Indian food here in California. But I eat it as often as I can. It is the best! But the food I had in India was much better than the Indian food here.

    Always knew about Pathar ke kabab but never saw the kebab being made. Also the use of Pathar ke phool. And right said by Sir the feeling of watching the gosht being cooked on the pathar is beautiful 😍😍😍😍.

    i have a few questions for the chef if he can answer this or anyone is free to answer these:
    #1- does the granite has to be smooth or rough and uneven?
    #2- how to season the stone first time before cooking and do you do it just one time when you buy the new one or every time you cook?
    #3- what if we do not have the granite, what is the other alternate thing to be used?
    #4- how do you slice the meat to get thin? or just take any meat and flatten it by using a hammer or pestle?

    Another way to check if the meat is done, is to press the meat with a spatula and if its cooked the juices that appear will be translucent (clear like water) and if its not cooked the juices will have a color.

    If you daring enough then try all those eating places that don't even have names but has been serving mmmmmm food that turns ypu on for years. Have Tahaari at Khilwat or Aghapura, kabab mirchi ki chutney(this chutney, you will never taste anywhere else) opp Rama Talkies Bhadurpura and also at purani Haveli, Warqi Paratha in the middle of the road OPPOSITE Shahraan hotel and also Talivi machhli BESIDE Shahraan hotel, Kalyani biryani at Chowk(not sure of its there still) or at Ajwa hotel or Alhamdulillah hotel and then khichdi kheema khatta at Rumaan in Khilwat, Shawarma at Mallepally mmmmmmm, Mandi at Barkas, Chaakna at Shah Ali Banda, beef paya in Mangalhat(3am) and of course Haleem at Pista House(but it only in Ramzaan) and then crash any authntic Hyderabadi shaadi or Walima in the day time where the tradition is the relatives who are looking after the cooking arrangements and the cooks themselves eat gurde ka saalan and khatti daal chanwal at lunch. I used to volunteer for Khaane ka Intezaam just for this lunch. If you go to any shaadi khana at daytime you can also see how them are cooking it all up.
