    Thank you Cooking Ah Pa for fantastic video guidance. I've made some adjustment according to my family preference, and it seriously turn out superb for my home-made nasi lemak with cucumber, peanuts, crispy anchovies, egg and chicken wings. I would say this is the perfect sambal! It is so delicious that it can even be eaten with just the plain rice. I do agree that there is no single way to cook. When comes to cooking, there is really no strict SOP. Every cook can adjust the recipe according their preference. If you find the anchovies too salty u can rehydrate it to reduce the salt. Thanks again for your generous time and effort to share this video. This is definitely a very good recipe. Thumb up!

    As you mentioned, there's more than one way to cook something. You go right ahead and give them anchovies a good soaking if you want!! Enjoying your cooking vids in Northern California, especially the detailed instructions.

    Very simple. acctualy sambal ikan bilis must put tamarind..sambal must pecah minyak.kalau tak u sakit perut...

    For those who want to remove seeds from dried chillies :
    1.cut the dried chillies to 2 or 3
    2.boil them
    3.filter them the chillies and seeds

    Put in petai would have been lovely . makan dengan nasi lemak kukus . lauk ayam goreng ,sambal ikan bilis yg tidak bergula bawang besar yg maseh separuh masak , timun jepun , telur darda mmgh... I don't like to put sugar in, it spoil the ikan bilis tastes . ni Kelantan yg ajar ni semua nak taruk gula

    My mother use to make this for us, remember once she made a batch and left it in the fridge to the next day, I returned home very late and as usual very hungry, I found this in the fridge, too lazy to cook some rice I had most of it in a sandwich (delicious). Left early for work, got home to a very angry mother, she got even angrier when she learnt I ate most of it in a sandwich. One saving grace, her friends thought it was the funniest thing they ever heard. So thanks for letting me know how to cook this, my mother is no longer with us, for got to ask her how to make this dish, very fond memory, cooking and eating this dish, although this time I ate it with rice. BIG THANK YOU.

    I think you're just mentioned that you want to use again the anchovies fried oil to cook sambal.is it right?.my mother always use anchovies fried oil to cook the blended ingredients.(sambal)almost the malay style cooking anchovies sambal used the same fried oil..but you used the new oil..so..well..it still good and tasty..good for you!

      Yeah, initially yes, but after frying, i think i over fried, the oil becomes darken, so i decided not to re-use it for my sambal.

    Would be better if you cook longer. You just missed Asam Jawa. Sambal must go along with Asam.

      Agree. Half a table spoon to one table spoon (depending on your preference) of Asam Jawa soaked in a little hot water and added to the sambal paste (while cooking in the pan) would enhance the taste. Also one big onion, sliced, and added to the end of the cooking, would add flavour to the sambal.

    Nice receipt, however should not use a metal spoon to stir the Sambal , it causing a reaction against the saucepan. Use wooden spatula instead.

    Just to clarify, we differentiate small onion as “eshallots” from the normal big onions. 😊
    Also, can I replace dried shrimps with belacan as I still have a bar at home?

      Moist causes the bubbles. The more bubbles the more moist. This is the best indicator.

    in malaysia people using lots of dried chili in indonesia they use always fresh chili .what is the difference?. sambel looks great anyway .i like sambel teri[bilis]

      Fresh chili TAK SEDAP (not delicious) for making sambal ikan bilis. Dried chili tastes better. Fresh chili is only good for some dishes, e.g, SAMBAL BELACAN, I'd definitely use fresh chili..but for ikan bilis sambal, it tastes better using dried chili..I don't know how Indonesian sambal bilis tastes, never had a chance, never been there..but I've tried ayam penyet (bruised chicken-Indonesian dish) recipe at an Indonesian restaurant in my area, prepared by Indonesians themselves, it is delicious..so fresh chili suitable for ayam penyet sambal..

      found that adding tomato paste from KFC makes a whole lot difference due to it caramalization.

    I would put more bawang and air asam jawa. Need to clarify the dried chillies to be soaked in hot water or you can boil them. You must be overseas if you hv to cook sambal bilis yourself

    Can u recommend a good chili grinder. I use to grind half kilo to 1 kilo of chili each time but the seeds still remain in one piece. So i need a better blender/ grinder. Thank you v much ....

    All those comments about chilli seeds. ...
    If you can take spicy you blend the seeds as well. If you cannot, then take the seeds out. Of you cannot take spicy then sambal may not be the dish for you.

      Hi. I wrote the saté spelling because i believe that I had a few chances a while ago to taste some type of grilled skewered chicken lightly brushed with what seemed to be peanut sauce, and I think they were called satay chicken (??).
      The sauce I was asking about, has a similar chili oil & color and may have for the heavier contents below surface some other spices in addition to ground/finely chopped red chili peppers.. Thanks all the same for additional suggestions. Good tasting foods are essential to this difficult period of time, take our minds off the main worries at least few times a day.
