We get all of our beef from our son-in-law rancher, but he keeps forgetting to request beef bones (for both stock and roasted marrow) when having it processed. Love the guy, but no matter how many times I have asked, he forgets. Same thing with fat trimmings for tallow. Oh well.

How much water if I’m doing this in a stock pot?
It really depends on how much room is left in your pot after you add everything. The big roaster holds 2 gallons of water.
