These pompano are my favorite fish that I've tried from there so far. I love salmon but if I want to steam or pan fry a whole fish for some crispy skin this is my go to. My husband and I are hoping to move to Florida in the next year and I would love to try fishing for my own pompano at some point.

I love pompano when I make a fish cases with vegetables...and scranble eggs all togheter..mix everything and put on a small aluminum mold on the open and make your fish vegetables eggs cake...try it its deliciuos...
dried shallots are mild, and have a wonderful aroma, even caramel like; they take a little longer to reconstitute in water, soup, or broth, than toasted onion bits, and are crunchier... but both worth trying for a different flavor and less time involved than dicing/sauteing fresh.
hi vic, I saw your wife's shirt that said rincon Puerto Rico, I live there and im curious if you are planing a fishing trip to here, theres tones of charters here that take you fishing and snorkeling and there are a lot of variety of fish too, im glad i was born and raise here in rincon its a awesome town with some awesome beaches!
should try out Pompano sinigang, fish soup with a tamarinde soup base (you can just buy the knoors soup base mix, or make it yourself) chop the pompano with skin on into steaks, mustard greens, tomato, onion garlic, serranos or jalapenos, asian long eggplant, daicon radish,greenbeans, double up on the mustard greens because it will shrink, add it last lightly blanch.
