You know I never realized until now how weird it was that Skinner just left the roast burning without putting it out. You steam a good clam!

He was so caught up in trying to impress Chalmers that it didn't occur to him that leaving it in there with the oven still on might be bad.
Generally it’s safer to turn off the heat and keep doors closed to starve the oxygen. Opening a door to put it out can cause a much bigger fire.
He literally shouted "it ruined" left the oven on with the flaming roast, and noone smelt smoke.
Think if he had just turned it off then the fire wouldn't have happened
The line "I'm pooped" turnt into "I pooped" ended me hahaha

I like how the most tension in the scene was over the location of the regional food.
And even then it was superintendent chalmers being awkward, because he was being needlessly pedantic
I was kind of expecting Skinner to answer with New England instead of New York. Steamed clams make me think of Boston, not Albany.
I hated that part
The tone of voice is sceptical and aggressive, but if he said it in a friendly tone of voice instead it would just be light conversation, Chalmers showing polite interest in the dish
Also implies that Seymour wasn't lying in the original scene, he is from Albany

Skinner could’ve avoided the majority of his problems by just putting out the roast. That’s something that would’ve made a lot of sense considering he’s a volunteer firefighter. By putting out the roast and just telling Chalmers that he accidentally burned it he wouldn’t have had to lie about the steamed clams he was cooking, the trail of lies that steamed hams caused and Aurora Borealis being in his kitchen
i think his thought pattern was that if chalmers knew he had fucked up cooking his roast, then he'd see him as irresponsible. of course, the alternative wasn't much better.
The point of the original scene is that skinner is so adamant to stick to his lies that he'll even let his kitchen burn down just to make it seem more believable

I accidentally fell asleep once with a roast in the oven. No fire, no smoke (until I opened the oven), just a charred exterior to the roast and was able to salvage some of it.
