For those of you having issues filling the shells, try a pastry piping bag, or make one from a zip-loc big enough to hold a good bit. Cut off a corner, just enough to allow the filling to come out and fill the shells easily. I was a Chef years ago, and this is a good trick for numerous shells, and works for Manicotti as well!! Whenever I make stuffed shells I always kind of pinch the cooked shell in the opposite way of its natural shape so it kind of makes a little bowl. Think of the way people stuff dumplings. Makes it super easy to fill that way and it goes right back to the shell shape! Looks sooo delicious 🥰

Tried this last night and it was a hit with my family! I did change the pasta to gluten free penne pasta and we used fresh spinach!
