I grilled some chicken wings and smoked some sausage yesterday directly over the coals on my Weber kettle. I put the meat over the coals while the coals almost white like you said. Then I closed my top and bottom vents to the point where they were nearly closed in order to cut down the fire. The bbq turned out real good. My sister and I loved it. Next time for memorial day I am going to try grilling some spare ribs and chicken. You taught me a lot about on how to barbecue by watching your videos.

G Rich!!!! I tried the mustard grilled ribs yesterday for my family and man,. They LOVED THEM!!!! I’m not a big rib person but I did a slab of babybacks and a slab of spare ribs and they were delicious!! My grandmother made some homeade BBQ sauce and it didn’t get touched!! She tried the ribs to make sure they were done (she didn’t trust I could cook them right) and then said they didn’t need anything!!
