I'm a chilean amateur bartender and I think I found a great pisco cocktail. It's half piscola, half Tom Collins, half pisco sour. Yeah 3 halves. So: shake 1.5oz Pisco, 0.5-1oz decent triple sec, 0.5oz lime juice. Double strain in a lowball with ice and top with coke. It should be only a topping but you can experiment with the amount. I call it the summer sour? the chilcano-cola? who knows, it's tasty and so far I've only gotten requests for a repeat.
All three of those drinks look absolutely incredible. Definetly going to try and make them along with a Pisco Sour as soon as I can get my hands on some Pisco at a good price. Keep up the amazing work Lui.
