    I just made this with scallops. I didn't have my rice cooker, so I replaced the rice with yakisoba! It was very delicious, and one of the best meals I have had in a long time. Thank you, Chef and Francis! :)

    Corn starch will also thicken the sweet vinegar sauce but cook it thoroughly to remove its smell. The sauce with the potato starch is clear but the one with corn starch is translucent :)

      ***** Well, technically, Tenshinhan got outstripped by Gohan-- heck, at the end of the Cell Games everyone was outstripped by Gohan. And considering the meaning of Gohan...
      The strongest dish is a simple bowl of white rice. Considering the importance of that bowl in Japanese cuisine, that's as it should be!

    I'm eating my version of this dish for breakfast! I altered the recipe to use ingredients I already had on hand, which included making a Korean sweet vinegary sauce instead of the one in the video. Delicious! One day I will make this recipe exactly. Thanks for sharing!

      I know right? I actually made this recipe multiple nights in a row to practice flipping it like she can, because before I had trouble with it. I'm still not very good at flipping large okonomiyaki yet imo. But that could also be because I was made it too big for the pan I was using and it wasn't on an electric griddle.

    You can just leave out the sake :) Chef suggests adding Doubanjiang (Chinese chili bean paste) to make the sauce spicy.

    this recipe is so similar to fried egg with rice in my country. The omelet is made in very hot oil and crispy at the edge, eat with chili sauce. Smell irresistible for all hungers.

    I like this recipe very much. But I make substitution. I use no rice, but chocolate cookie. And for egg I have ice cream. For sauce I use chocolate sauce. It is very tasty. I love your show. Your dog teaches you very good cooking. Your dog is very nice to give you good food.

    I think it is a more concentrated flavor because it's been through the drying process and then slowly absorbs the rehydrating water. I buy dried mushrooms a lot, especially for stir frys and fried rice.

    The first time I made it I didn't have any crab meat, and so just left the crab meat out without substituting anything. it still tasted great!

    This looks amazing I had never heard of this. I like eggs with rice and will try this. I don't eat much meat or seafood so I will use tofu instead and maybe additional vegetables. Your recipes are so easy and well presented! Thanks!

    Jamie Montes....you can find potato starch in a Wholefoods Market if you have one...or you can find it in the health food section in you grocery store. If you still can't find it, regular cornstarch will be a good substitute.

    Generally there are no direct substitution for mushrooms. What to substitute will sometimes depend on what dish is being made, as mushrooms not only add flavor they also add moisture to many dishes.
    As a general guide I would say this:
    You can either leave them out or use other veggies.
    For added “mushroom-like” texture, use pieces of tofu. The tofu will simply absorb the other flavors in the dish.

    Exactly! It's too bad that there are others posting with chips on their shoulders who don't understand the idea behind an "inspired" dish. it's not saying it's authentic, it's saying that the flavours behind the dish are inspired by an area. It's not much unlike how the West as adopted "Sushi" and have made some unique purely western sushi types that were never eaten in Japan. They were "inspired" by something else.
