Savory Dutch Oven Sweet Italian Sausage & Fresh Mozzarella Lasagna: How to make Lasagna

  • Savory Dutch Oven Sweet Italian Sausage and Fresh Mozzarella Lasagna
    Lasagna Ingredients:
    • 2 lbs fresh Italian Sausage (Sweet or Spicy depending upon your preference)
    • Fresh Basil
    • 4 balls fresh Mozzarella
    • 4 sweet peppers
    • 1.5 Jars Marinara Sauce (Your Preference)
    • 1 bunch Fresh Italian Parsley
    • 4-5 fresh garlic cloves minced
    • 1 small diced medium onion
    • 1-2 cups fresh Pecorino or Parmesan cheese
    • 1 package Lasagna Noodles
    • 1 tbsp granulated garlic
    • 1 tbsp Italian Herb Blend
    • Pepper/Salt to Taste
    • Olive Oil as needed
    Garlic Cheesy Sourdough Bread Ingredients:
    • 1 loaf fresh sourdough bread
    • 4-5 cloves fresh garlic minced
    • 2 tbsp fresh parsley
    • 2/3 cube salted butter
    • ¾ cup fresh Pecorino or Parmesan Cheese
    Lasagna Method:
    In cast iron sheet, heat over medium heat and add 2 tbsp olive oil. Brown sausage, onions and peppers. Within 1-2 minutes of browning, add minced garlic. Once brown, add Marinara Sauce, dash of fresh basil, granulated garlic, and Italian Herb blend. Continue to simmer.
    In a separate large stock pot, bring 8 cups water to boil adding 2 tbsp olive oil and a dash of salt. Add Lasagna noodles and cook for 8 minutes. Drain and reserve. Sprinkle with olive oil on drained noodles to prevent sticking.
    In a large Dutch oven or casserole dish, layer sauce over bottom of dish. Continue to layer as follows; lasgna noodles, sauce, diced fresh Mozzarella, Pecorino, and fresh diced basil. Continue layering until sauce/cheese/pasta have all been used.
    If using a Dutch oven, put 10 hot coals on bottom and 15 hot coals on top; cooking or 35-40 minutes. Replenish with fresh coals every 15-20 minutes.
    If using an oven, cook at 350 for 40 minutes covered. For last 2-3 minutes of cook, cook under broiler to brown cheese.
    Garlic Sourdough Bread Method:
    Cut bread lengthwise. Spread softened butter over both slices of bread. Spread fresh garlic over both sides. Sprinkle both sides liberally with shredded parmesan or Pecorino. Sprinkle fresh parsley to garnish. Double wrap bread with aluminum foil. Bake in pre-heated oven or Traeger at 350 for 30 minutes.

    Dave, lasagna is a favorite! This recipe appeals to the tastebuds (and, I would typically love ricotta but mozzarella looks just as tasty!) I’ll have to learn the Dutch oven cooking method. Lastly, the French bread is to die for…definitely high on the yummy list. Kisses to Luna!

    Another yummy recipe Dave! I’m currently in the VA area and got hooked on Maryland crab cakes, have you ever made them? PS I don’t like Ricotta either, liked your solution for that.
