What Uncle Roger said about wasting rice is so true though. I still remember an anti food waste poster I saw in Beijing. It said "one grain of rice is a drop of sweat on the farmer's back". Harvesting rice is so tough, and food waste is such a big problem globally. The video is fun for sure! But he really hit the nail on the head there

Hell yeah. I never liked food waste, but I remember seeing an anime or manga like 15 years ago in which a character told his fussy sibling that farmers worked hard to grow those vegetables. I'd always appreciated the food... not so much the people who raised, collected and processed the ingredients.

When I first started my executive chef told me "things might get real heated in here and you might get some real harsh criticism, but when the night is done, we will go have a drink and that is all left behind." The light you see on the coils in the stove is emitted by the coils themselves. You'd need quite a lot of power to heat the thick tempered glass top that covers the stove top, so they have to be red hot. Not so much on the stoves where the pan rests directly on top of the heating coil. As per your video, I noticed you speaking over the video whilst it's playing making you miss things and, in this particular one, the best joke in the entire video.

You gotta love Kay's never quit attitude. She will mess up a dish and only days later come back and try again. With the right guidance she could be an excellent cook. She just has no idea what she is doing but clearly enjoys cooking. Gotta respect someone trying to put home cooked meals on the table for their children.

Hahaha. Kay has said before that they hardly cross paths even while living in the same home. Lee does his thing in the basement. (Does he still have a gaming channel?) It doesn’t sound like Kay cooks much for him. I imagine most of her food consists of beans on toast, mashed potatoes and sausage; very simple things so she is out of her element when she “expands” her culinary chops for videos.

I don't use my wok often. But when i do, i take that section of the cast iron grate on my 16000btu gas burner and turn it to the side, just to support the wok from tipping forward, and i can keep it at its highest heat in a home type setting. It's not a proper wok burner, but its the best i can manage with the tools i have. My stove is stainless steel, with cast iron grates, and is natural gas. So it's basically bulletproof. All the burner tops are cast iron as well, so a wok on them doesn't worry me about any sort of damage at all. If a stove is 100% clean and absolutely scratch free? You're not actually cooking.

Paella is another example of a dish where you add the uncooked rice to the pan, fry it with the other ingredients for a few minutes then add your stock in small increments while the rice cooks in the pan. I shudder to think what abomination of an outcome Kay might achieve if she ever turned her hand to making a paella, but at least she'd start the rice the right way by adding it to the pan uncooked. However, I'd be willing to bet my house that she'd use basmati or some other long grained rice and probably add all the stock at once then continuously stir the rice until it turned to mush.

That cooking field does look like a Ceran cooking field, yes. Basically a grill in glass. Terrible to adjust heat. Even worse than the old metal plates. If you can't have gas, get induction. No waiting for hours for the pot to finally heat up and no residual heat of the glass that is still dangerously high 15 minutes after you turned the stove off.

I’ve watched this episode a few times, a few times watching other people react as well. I love Kay deeply but I came to a strong realization. I was trained as a chef, vocational school a bit of college and some restaurant work (not for me as you described). I don’t think I could cook this badly if I tried. Like my knowledge of cooking and knowing what’s dangerous in cooking doesn’t allow me to even think about burning garlic to that level if I was told to make a bad dish. Think about it a bit, how would you make a bad dish and then look at a Kay video and she will smack you out of the park. And I find that more impressive in an odd way?

Small point of clarification as Uncle Roger got something wrong. You don't use the back of the knife (the spine), you use the flat of the blade to flatten garlic. I've always heard "use the back of knife" but my pedantry always triggers and I have to constantly try and stop myself from correcting people. I'm not positive that there is actually a knife diagram anywhere that shows what the flat of the blade is called, it all seems to be unnamed other than the heel.

I watched the 2nd part first, and had to come back to this one. I love Uncle Roger. Super funny guy!
But anyway, I have an aunt Kaye, and she taught me how to cook. Great woman. She is the one that raised me from ages 4 to 17. She's my momma! When I was a kid, I would hang out in the kitchen while she cooked. I've always had a fascination with it. She would make homemade mac'n cheese (a giant block of Velveeta, and elbow macaroni) and since then, it's been my #1 favorite food.
I'm almost 37 now, and I believe I can fully comprehend how food is supposed to look, taste, and smell. My two favorite dishes to make are Cheesy Shell Pizza Casserole, and one that has farfalle, alfredo sauce, peas, and for my personal touch, some Velveeta Shreds. It becomes cheesy, while still being creamy. I like to add my own touch to come dishes.
Anyway... I've seen a few of your videos, and I enjoy every one!
