    Japanese here. Putting spinach in ramen is pretty common among special variant of ramen which is called 家系 (Iekei). These ramen shops all share the same root from 吉村家 (Yoshimuraya), so that's why they are called "ie" (家 coming from the 3rd letter of 吉村家) and "kei" (系 literally means series). Because Yoshimuraya used boiled spinach, all other iekei ramen uses it as well. But the amount of spinach Jamie put in ramen just cracked me up. And the use of soba was outrageous. It's like making a hotdog and and call it a hamburger in the U.S.

      Im personally not a fan of spinach in ramen. Its okay wont complain if im served just a little in my ramen. Doubt it ads much flavor or texture probably just increases the volume and adds a bit of healthy veg. But the way jamie added a literal compressed ball of ramen is so weird just big mouthful of spinach super weird unless he uses chopsticks to break it apart while eating. But even then breaking it apart before serving is probably way better

      @@erickellar5867 Iekei is my favorite type of ramen, and I think the spinach actually works really well in it. They generally don't put in a ton- it kind of gets saturated with the broth, and tastes very salty and strong. I don't think "healthy" has anything to do with it- iekei is not about healthy, lol.

    I am not asian myself but when I see videos of white chefs trying to capitalize on the interest in Asian cuisine by releasing recipes like this it kind of annoys me. Jamie is just putting in random ingredients that are generally Asian like the miso, kimchi, soba and all this other crap so that people who don't know Asian food are convinced its legit. Jamie obviously is not at all interested in learning about the cuisine himself and trying to create something authentic or he would have done a much better job. In his position he should do research and make something properly or not make it at all, these shitty random approximations of the real thing are just annoying and shows lack of respect.

      I am very accepting of East-West Fusion cuisines, which have a history in Asia and the West.
      However, it requires either necessity or a long term desire to make it work.
      Jamie doesn't have either.

    As someone from the UK who grew up in the era where Jamie Oliver was seen as some kind of healthy food Messiah, I can't help but wonder if he thought soba noodles were some kind of healthy alternative to ramen noodles, without realising that ramen is the name of the noodle and not the dish 🤔 Would also explain why he just boiled the pork without flavouring it, as well as the ball of boiled spinach (and lack of MSG 🤣)

      Especially as buckwheat is supposedly healthier than standard wheat, and the fact that he used low sodium soy sauce, you're very likely onto something here.
      Water and fad diets are the enemies of flavor...

      If you want healthy food, than drop all the noodle dishes which are generally juts salt and fat with lots of low quality carb. You should eat ramen for the taste, not for the health benefits.

      @@MrKrtek00 I would say that there are ways to make it a tad bit healthier, especially when the choice is between something like less sodium or not being able to eat it at all. But using soba noodles in a ramen is definitely not one of these methods.
      And for people that *can* eat the originals without dying, why would you ruin a work of art? Just eat it the way it was supposed to be made! The traditional ingredients are there for a reason!

    Miso should never be boiled for hours. In fact, whether you're making a soup or a miso based stew, miso should ideally, be stirred in last and served without putting the soup in a roiling boil.
    Because that would destroy the enzymes in the miso that's good for health.
    Also, if you ever had bad miso soup, it's probably because there isn't enough miso in it. I tested this theory with my sister and dad, both picky and opinionated eaters who disliked most miso soups except for the ones served in higher end restaurants. They never like my miso soup, until I tripled the amount of miso I put in.
    Dad actually has a more refined palate, so if he says something is good, it's definitely good. Sister is just picky, lol.

    Generally the Chashu is a separate thing to cook, gently braising/simmering it in a really strong sauce, chilling overnight, then slicing and reheating right before serving.

    Love this one. Jamie like, "I'm going to make Ramen with Soba noodles!" is like saying, "I'm going to make a sandwich where I put all the ingredients in this tortilla and roll it up!"
    Jamie be like, "I'm making a nice steak and potatoes dinner. *later on* And here we put the roast chicken breast on the plate with a side of balled-up spinach. And that's how I make steak and potatoes."
    Or, for those RHPS fans, "This laser shoots a beam of pure anti-matter!" Then it's not a laser!!!

    I recommend watching some videos by “The way of Ramen”. He talks about the traditional structuring of ramen, explains the concept of “Tare”, as well as touches on some nuance. 10/10 best starter ramen channel.

    The only things Jamie did right were the eggs and the kimchi. I started adding kimchi to Ramen a few years ago, and the flavor really pops. It's certainly not traditional, but it's very tasty.

      The eggs are not a crime but they are definitely not authentic. You are supposed to add japanese soy sauce, MIRIN (a type of sweet cooking wine made of sticky rice), and a pinch of sugar to give it a hint of sweetness. Marinating the egg all salty and putting star anise in it is more of a chinese way of doing it

      For what it's worth, kimchi ramyeon is a thing in South Korea (I believe Shin Ramyun has kimchi flavored noodles, and you might be able to find Samyang brand Kimchi noodles in Korean grocers), so no issues there.

    Jamie creates dishes like my drunk ass at 3 am coming home from too many beers. Put some left over Kimchi in there? Sure why not. Those last two ham slices sitting in the fridge for the last couple days? Yeet them right in there. Noodles for Ramen? Shit all I got is left over Spaghetti from yesterday but sure let's give it a try. I mean it will still taste good but i wouldn't put this as a recipe in a book and sell it for 30 bucks. :D

      He does seem to use the "clean out my pantry, fridge, freezer" method to make his food instead of an actual recipe. I love building on a "use it up" ingredient, or several, but I feel like Jamie has too many disparate ingredients to actually make any coherent dishes. Like, I have a section in my pantry for "international food" that has Mexican food components and Indian, Japanese, Chinese, and Thai ingredients. But I know which specific dishes, and have solid recipes, I make over and over again. So, I always know when I look in that section to "clean out my pantry", I know exactly what to do with those ingredients. I mean, I get it if you're at the end of the week (or month) or whatever, and you have a bunch if random stuff in the fridge, but Jamie can't even do a fried rice for that. I think the only thing I learned from Jamie Oliver is that he isn't good at planning to replenish his pantry.

    In ramen videos like these it definitely feels like production deadlines are superseding quality and respect of the craft. People think ramen is simple enough that you can just follow a recipe on your first try and get it right.
    The first time I tried to make tonkotsu it was a pretty glorious failure. So I broke it down into the ajitama, chashu, and the tare/broth/aroma oil. Worked on making each thing individually until I was satisfied with it. Then put it all together the next time I did it and it was amazing.
    I took a lot of inspiration from Adam Liaw's Ramen School series and the Way of Ramen TH-cam channel. Also took the scallion oil from Chef Wang Gang as the aroma oil.

    I’ve spent several years in Japan and had my fair share of ramen in many different variations. Although Kim chee is very common all over Japan I can’t say I’ve ever seen it in ramen.
    The things that stand out the most are the quality and texture of noodles and the flavor of the broth. This wasn’t even close to ramen.
    For most types of ramen, first in the bowl is the tare and aroma oils which he didn’t even make. The broth next. Noodles get folded in neatly then toppings placed in. Each of the toppings are excellent on their own but even better together. It’s not just a bowl filled with random Asian ingredients. You can buy better convenience store ramen bowls that you just microwave than what Jamie Oliver just presented to the world.

    For a throwback feel, dope ass video, maybe react to one of the most iconic Asian chefs: Martin Yan. The show Yan Can Cook was one of my favorites growing up, gave me a deeper appreciation for the culture, and dudes charisma is just unmatched

    I have definitely had Kimchi Ramen in places that are multicultural Asian areas, and it was amazing. It's not necessarily traditional, but it's great. that acidic spice it brings can really perk up the flavor a lot.

    I'm a new watcher/subscriber who TH-cam suggested to me because I love Uncle Roger and Chef James Markilson (sp? I know I butchered it, he's an American who cooks in Spain via France). I really enjoy your videos, especially with Uncle Roger. It's funny because I actually used to watch Rachael Ray when she had the cooking show on FoodTV and learned some tricks from her, but even I knew some didn't make sense. As a woman who last night put tater tots in a casserole, things in between, Pilsbury crescent rolls on top with cheese until it was melty; you know how bad cooking advice has to be 😂

    The kimchi looked weak and be careful just adding it. There's different stages to kimchi. Fresh kimchi is always with rice, when it starts turning let it sit, and when it's fully "soured" is when you use it for soup, fried rice, etc.

    Bit late to the game, but your explanation for the soba noodles makes sense. They bought them by mistake and had to use them because otherwise they would have had to delay the shooting. I've watched this video and other reactions countless times, but you are the first to come up with a plausible explanation. Same goes for the infamous water spash in his egg fried rice that you explained by the chili jam caramelising too quickly.

    Here are two possible explanations for what happened here. (Since with all due respect, any Jamie Oliver recipe is the culinary equivalent of the black box from a plane wreck, and the best way to enjoy is to sort of work backwards from the result and try to figure out what's going on in that head.) Explanation 1 is that Soba is considered to be a bit of a health food in Japan, so he's just trying to do what he thinks of as a healthy substitute. But, the high fat, high sodium ramen broth defeats the whole darn point. And good soba is best paired with simpler foods so that you can really let the nuttiness of the noodles shine through. Explanation 2 is that in Japan, a common term for ramen shops is "chuka-soba" (chinese soba) but soba in that context is used to refer to noodles. (cf. yakisoba, which is essentially chow mein flavored with worcestershire ). Anyone else have a theory?

      I don't think soba noodles are considered a "health food" in Japan. They're considered a health food maybe by Jamie but in Japan they're considered just another popular dish. I say this as a zaru soba lover. It's just a different type of noodle with a different flavour, texture, and toppings/sauce. Soba vs ramen is like spaghetti vs pizza imo or hamburger vs steak..

      @@vincentchow6448 It's not like a health food health food, but for example you've got the custom of drinking the soba boiling water for the nutrients, so I'd say soba is considered good for you. But then again I've only ever seen people over 60 drink the soba water so maybe that notion is dying out. Anyhow it's not correct, but I could see how someone approaching it from a whole foods perspective would just assume soba is a healthy "whole wheat" product and not really get the unique value it has as a separate thing.

      The yaki-soba we had in Okinawa didn't have worcestershire. The soba noodles were made from buckwheat, IDK if it had wheat flour as well.

      Noodles of any kind have very low nutritional value. Maybe he thinks soba is healthy because he's associating the color of noodles with Italian pasta, which is mostly eggs and flour and all "supposed" healthier pastas are not yellow. It's a bit weird to consider his healthy approach when kimichi has tons of oil, pork rinds are skin with fat on the other side among other things.

    Jamie Oliver is someone that has been a good chef then he started going on his crusade for healthier eating which has led to his butchering of traditional dishes. What's really bad about it is, he doesn't preface that he is attempting to make a healthier dish inspired by a classic but tries to represent them as the classic.

    Roasting bones is a western technique. In japenese you want clean flavor. You usually boil bones dump it out wash brush bones and simmer 1 day.

    Just a correction. It’s not sodium bicarbonate but sodium carbonate or more traditionally, ramen noodles are made with Kansui or in English it’s lye water

    I've seen comments talking about the health factor... and I agree that maybe he makes edits to make things healthier. But he should say "yes, these are soba noodles and the dish is called ramen because ramen noodles are used in it, but I'm trying to use another japanese noodle that's a bit healthier" or something along those lines. So at least he would be explaining why he's completely diverging from the traditional recipe.

      I don't even think that regular ramen is that unhealthy in general either. Maybe it's too high in sodium if you drink all the broth but it's not like you eat it everyday and it's still 10 times better than Mcdonalds and all the other fast food joints people visit on a regular basis.

    Yes you are correct, Chef. Adding the miso at this point will eliminate allllll of the aroma, or 香り(Kaori) of the miso. Never boil miso. Uncle is also correct, make the broth, then add it to the tare, or ad the tare to the broth in the bowl, techs differ with everyone.
    Kimchi in ramen, or udon is pretty common in Kyushu, because of its close proximity to Korea but usually served on the side in my experience. And Japanese spinach, or Hourensou which has a bit different flavor, a bit more bitter, is a common topping for ramen.
    Funny enough, in fancier Ramenya, they call the ramen soba, like at Soba Noodle Tsuta. I think its because they used to call ramen chukka soba, or Chinese soba, so its like an homage to oldschool ramen.... I think.?

    Apart from all the obvious f**k up in this video, I want to add something that might be overlooked. Putting miso paste first like that will completely destroy the miso. The aroma and taste of miso are damaged when boiled.
    I learn that even when making miso soup, you need to wait until the soup has been taken off the heat before adding miso paste and letting it melt into the soup with the residual heat of the stock.
    And Jamie cooked it for 4 hours. There will be no miso flavor left by the end of it.

    Jamie Oliver usually tries to make "healthy" alternatives so him using Soba which is made from buckwheat which is seen to be healthier than regular flour which is what normal Ramen noodles are made from

    Ramen noodles are made from Alkaline wheat noodles (Kansui or baked Baking Soda contains Sodium Carbonate, which gives the yellow color) and Sodium Bicarbonate is usually from Baking Soda... kinda funny about the Chashu joke and comparison of noodles and analogy of it lol

    Honestly, while a complete fail using Soba noodles instead of ramen, i wont lie, cold soba is actually a great dish for any who havent tried it, while the noodles themselves are not much, the dipping sauces, the cooked veg and meat, and other add ons that go with it actually make it a wonderfully enjoyable dish.

    Soba noodles are great but not ramen. A lot of ramen soups would probably work with soba noodles if that's what you have on hand(a lot of what I cook has a vague target but I don't have the ingredients and I improvise with what I have), but when you change the base of a dish you fundamentally change the dish.

    As a Korean, that kimchi doesn't even look like a real kimchi. I don't think a red salad without a single red pepper powder is kimchi.
