@21:40 where the filet flops out the spoon he should've gone with: It's still alive. And technically it's poached despite it being boiled. Doing a chicken breast this way has pretty good results as well since you can flavor/spice up your water and it infuses into the chicken whilst keeping it as moist as can be.

40 us ago I cooked on the shore of Lake Superior for a summer. We made poor man's lobster with Lk Superior whitefish. Easy recipe. Bring buttered water with a bit of onion, peppercorns, and a bay leaf. 7 minutes in boiling water and its done. Time might need to be adjusted for smaller bodied fillers. These were at least nine inches long and several in deep and fairly thick.

Watched this video and went straight to the freezer and took out some white bass we caught a few day ago and tried this. A hour later I will say it was really good and did have a lobster taste. A must try. Thanks for the info LFG.
Here in North we catch what we call crap fish. Sunfish, rockbass, any basic bait fish. Catch a bucket. Cut them up in small pieces. Bread them. Deep fry. Eat with dipping sauce.
Reminds me of what we use to call "poor man's shrimp", we were catching yellow perch in upstate NY, take Campbells tomato soup, about 1/2 can, this was more for color than anything else, put that in a pot of water, bring to boil, cut the filets to about the size of med shrimp, drop into the boiling water for 15-20 seconds, remove and eat, I would make some spicy cocktail sauce to dip in, texture was same as shrimp !!!

Without a doubt, the best way to keep fish fresh is to freeze it whole in clean water, it will taste as good as fresh caught and can be kept for several years without damage. Have tried vacuum packing and that works ok, but frozen in water is much better in my book.
I usually add a little old bay seasoning once its removed from the water. Also try local honey instead of sugar its a different taste but just as delicious.

Here is a good Reciepe for any fish. Use thin potato chips crunch very small in ziploc, Heavy frezzer bags work best. Melt Butter in a Bowl. Coat fish with Butter. Put in bag and coat fish with chips flakes and place in a baking pan. Use a glass or metal pan, can be cake pan or even a pizza pan. Bake for a while 25 to 30 min. Check inside if it's white it's ready to MUNCH. You can Tweek this any way you Wish as far as salt, pepper, Caujun, Red Pepper, it's all to preference. Hell sometimes i will have Italian, put some Italian seasoning in the mix. If you like Spicey Drop some Franks Red Hot on it. I Love Hot!!
Been told Flat Head Catfish taste like Poorman's Lobster cooked that way also even though I never personally tried it, but I've eaten a lot of Poorman's Lobster with Northern Pike being my fav.

It's also funny because up here in Michigan we do that to the sheep-head aka fresh water drum. Lake Erie is full of them dam things after a while when you can't hook a Walleye I sometimes take two three home to boil.
Good video buddy the original version of poor mans lobster is made with the shoulder of big striped bass fillets and it does have a unique taste other than crappy and you are more than capable of catching big stripers go get you two or three in the neighborhood of 8 to 12 lb and then try it and you'll taste some amazing fish 🐠🐟

Definitely more LFD and crappie.
A little bit of lemon juice firms them up before boiling them. I like to use a little bit of old bay in the water for added flavor

Add the juice of a lemon to your water, it will firm up the fish. Cut the fillets smaller, they will be less inclined to fall apart. Good eating.

Holy moly boss I just tried this recipe after watching your video and it's on point brother!!!
I always cooked Bluegill in butter over the fire and called it “Hillbilly Lobster” can’t wait to try this way.
Try adding a half cup of salt along with the sugar. That is how we do the poor man's lobster with white sturgeon.
We do this in wisconsin with burbot, but we do half water, half 7 up. Cut up into cubes, boil, and soak in butter

This time of year Crappie Nibbles really help the bite when they don't want to thump it.
If you plan on freezing crappie then freeze them in water. The texture stays a little firmer

You should let the white bass fillet sit in salt water for a half hour to an hour, it will draw out the blood from the meat making it taste way better
