- Lemon Bars with intense lemon flavor and a buttery shortbread crust. This recipe is so simple, can be made ahead and even frozen.

INGREDIENTS FOR THE SHORTBREAD CRUST:
►1/2 lb unsalted butter, room temperature
►1/2 cup granulated sugar
►1 1/2 tsp vanilla extract
►2 cups all-purpose flour
►1/4 tsp salt
FOR THE LEMON FILLING:
►7 large eggs, room temperature
►3 cups granulated sugar
►2 Tbsp lemon zest (from 4 to 5 lemons)
►1 cup lemon juice, freshly squeezed (from 5 large or 8 medium lemons)
►1 cup all-purpose flour
►Confectioners sugar, to dust

I've literally just sat down with one of my lemon bars I've just made. I followed the recipe exactly and OMG. Really delicious. Just enough tart in the lemon filling and the buttery crust..woth the powdered sugar on top. Perfect combination. Thank you

My daughter married a Russian and so we eat Russian food with their relatives and me and my husband have really come to love it. I have gotten so many of my Russian recipes from you. I tried this today and it was a hit !!💛 I ran out of flour for the lemon filling mixture so I mixed it with a few tbsps of cornflour and it still turned out great! ✨

Love this recipe ❤ I have a Meyer lemon tree so I cut the sugar from 3 cups to 2 1/2 and didn't add the powdered sugar. They were perfectly tart without being overly sweet. I've already made them twice and they were a big hit both times.
