I am an admin health care worker who cooks for my picky husband, and my differently picky 91 year old father in law, who has dietary restrictions due to meds. I am tired of cooking 3 meals after long pandemic days, and I can use all the help I can get.
If you want to be the kind of person who eats salad, buy a salad kit. All the fixins are included, so you just open, dump, mix. Boom! You're eating salad! You're welcome 😁
I love this idea. I have a ton of spices and condiments because can never find ones I love but I could make my own spice mix recipes and go to sauce how I like.
This was soooooo helpful! I’m like Terrance except I don’t know how to cook that many things and I’m a picky eater 🙃 but I’m gonna try the meal matrix especially with the rice!

I was once told that freezing cooked rice was asking for food poisoning. Is that not a thing? Have I been making things harder for myself for NO GOOD REASON?!
You can absolutely freeze cooked rice! I would suggest spreading it onto a baking tray or dish to cool it quickly, then package it up in ziplock bags or other freezer safe containers in whatever is a good “portion size” for your household. Defrost it in the fridge when you’re ready to use and reheat in the microwave in a covered dish with a small amount of water added.
