After years of struggling with gluten & soy, I finally want to bake again. I can't "Thank You" enough for giving me back my love for baking again!!!!!

    Omg. I just made this and it taste just like my favorite brand of chocolate chip cookie! Thank you so much! I don't have brown rice flour so I just made it with all white rice flour and a bit of honey instead of brown sugar and it turned out really good. I'm so happy I finally found an amazing gluten free cookie recipe. Thank you!

    I subbed Arrowroot starch for the corn starch and it worked fine. My daughter used to not be able to eat any corn products, so I had the Arrowroot on hand. It's a good substitute for those who can't tolerate corn.

      I just made a double batch yesterday and I split the dough into 3 bowls. I added chips to one, chips and walnuts to another, and M&Ms to the third. They'll all be gone by tomorrow!!

    Can I use a gluten free flour instead of the combination of rice flour & potato flour as your recipe asks for? Do I still need to add xanthan gum in it? Thanks

      Hi! Glad you enjoyed the bread recipe :) As far as the cookies go, I don't get a chance to freeze the cookie dough because we always bake and eat them all :) But if I were to store them, I would suggest the following: Make the cookie dough scoops and place onto your pan, put pan in freezer to flash freeze them (15 minutes or so), then remove pan from freezer and put frozen dough balls into a large ziplock freezer bag (or even double-bag them) and store in freezer. When you want to bake some cookies, just take out the quantity you want to bake, put them on a parchment-lined pan, leave them out on your counter for 15 minutes or so, so they're not fully frozen, then bake in preheated oven! Hope this helps.

    How to you feel about cup for cup, premixed GF flours? I’m curious how to convert some of your recipes using GF “flour”.

      Hi Mindy! Great question. I don't have anything against the premixed GF flour mixes, but I don't personally use them in my recipes because I prefer to create my own mix for each recipe that I'm developing. Every cookie/cake/bread/waffle is unique and needs a different combination/ratio of flours/starches to be it's best :) Sometimes I try many combinations of flours before settling on a few to use. By controlling all of the ingredients, I can more easily get the results that I'm looking for.
      If you decide to use a GF flour mix, it may work, but you will get different results than with my recipe (taste, texture, etc.), simply because they use different flours/starches, and in different ratios. Another thing to consider is that some GF flour mixes add in xanthan gum to their mix (some don't), so you will need to be aware of that, and adjust accordingly. You don't want too little or too much. Best of luck with it...thanks for asking!

    Looks great! I am allergic to rice bran though, so no brown rice for me. What would you suggest as a stand in? Sorghum? Teff?

    Being a gastric bypass patient, I havent had alot of anything great to eat, I must always modify the recipe. Then take out all high sugar and replace with SF options. There are alot of chocolate nibs or bars in high dark chocolate now though. I am going to get to bake daily. Yeah!!! Please tell me, can it be stored for easy cookies in the refrigartor? Then I can do a batch and cook through out the week. Thank you

    Question: Could I substitute maple syrup for white sugar and coconut sugar for brown sugar? I like to watch my sugars and look for different alternatives and am curious if this combo could still turn out delicious cookies?🙂

      I applaud the fact that you are seeking out healthier options...even in cookie baking :) I've never tried substitutions with these cookies so it would be an experiment if you are up for it. If you try the substitutions, you might want to reduce the amount of maple syrup just slightly compared to the white sugar. Crossing my fingers for great results!

    Love the cookies, but I think my stomach does not do well with the xanthan gum. I will omit and see how it goes next time I make these. Thanks for sharing!

      Yes, some people don't do well with xanthan and guar gums. Without it you may find that your cookies will be crumbly...there are some substitutions for xanthan gum that you might experiment with (psyllium husk or agar agar) but I have not tried them with these cookies so I cannot say for sure what the result will be.       I've always had great results with the xanthan gum, so I've never tested these cookies with anything else :) I would give guar gum a try.

      Hi Felix! Definitely you can but the flavor will suffer a little. (but don't get me wrong...I would still eat the entire batch). The semi-sweet chips have a stronger flavor that will stand out better because they contain more cocoa and less sugar. The milk chocolate has less cocoa and more milk and will not have such a strong chocolaty flavor. Enjoy your cookies!

      made them with the milk chocolate i had and they turned out great.
      i used 1 cup of chips and the sweetness was good for me. not a huge fan of sweets. but i do like a cookie from time to time it was just enough for me. the cookie dough seems to freeze well also.

      Hi Felix! You're welcome :) I'm so glad you liked them. I like to "flash freeze" pre-scooped single cookies, then put them all into a large zip-lock bag in the freezer. Then I can bake just a few at a time when I'm in the mood. Problem is...they don't last very long...Thanks for commenting!
