Filleting Hairtail for congee

Filleting #hairtail for congee.
Lumica Fish IKE JIME/Wire was used to remove the excess blood along the spine before filleting. Not a necessary step but I just prefer keeping my chopping board clean and free from blood. Not the best job filleting but I’ll get better with practice.
Hairtail was caught in the Hawkesbury River during summer.
