    I usually have a measuring jug handy with cold water in, and when I think it about ready, I put a few drops in the water. If it set hard, then its at setting point. Good video.

    O this takes me back... As childer we used to make this, and toffee apples. That was back in the ancient times when we used to play bobbing apples, and passing an orange under your chin to one another (we were a large family). Many thanks for sharing Sacha x

      +jaygbly Unlikely as meat thermometers don't usually go hot enough to deal with sugar recipes :-(

    I just love toffee when it is hard and chewy (soft caramels).
    Halloween kisses are my favourite with that wonderful molasses flavour but impossible to find after October!

    In Welsh we call it "Loshin Du" it translates to "Black Sweet(s)" or for the Americans "Black Candy"

    Your toffee looks delicious Sacha, I used to make great toffee years ago using condensed milk, but I lost the recipe, I'd love to make it again, any ideas Sacha, I'd be so grateful if you do, and pass it on. The best thing about it was you could add nuts, fruit, cover in chocolate. A good batch could even rival Thorntons .. Hugz and loves xxxxxxx

      +mimi19903 Yes... but it wouldn't be the end of the world if you used unsalted (salted caramel is always such a treat. Though it wouldn't necessarily carry through in a big way)

    I don't know what im doing wrong but iv just made it twice as in the video and it hasn't set, its very soft. any ideas?

      The temperature is off. You should take it to
      146°- 150° c It's called the Hard Crack Stage. The temperature Sascha gave is the soft crack stage.

    I'd love to make some bonfire toffee as my mum used to make something similar when I was a child in the 80's. Please can someone tell me though how easy it is to clean the pot after? It's the only thing that's stopping me from making it! lol.

      Just use boiling water and it'll dissolve and come right out!

      Cover remaining toffee in pan with hot water and washing up liquid as soon as you can after use. leave to soak overnight then clean with a wire scrubber it should come out no problem

    You're using a bit too much to wrap but ok just a bit of a waste of money and doesn't look as good
