    Alone and Kenai
    Vietnamese Pickled Daikon & Carrot (Đồ Chua)
    Recipe makes 2 quarts - 1 for you and 1 for a friend. 😉
    INGREDIENTS:
    1 lb. - daikon radish
    1 lb. - carrots
    2 Tbsp salt
    1Cup water - Boiling
    10 Tbsp granulated sugar
    8 Tbsp white vinegar
    Extra water as needed
    Peel daikon and carrots, then cut into small matchsticks. Smaller cuts will pickle faster. In a large bowl, sprinkle with salt evenly and toss to coat. Soak for 20 minutes. Rinse thoroughly to remove the salt and drain. Add to wide mouth quart jars, filling almost to the top. Mix the brine (vinegar solution) Boil water then add sugar, mix to dissolve, then add vinegar. Add the liquid to jars to fully submerge daikon & carrots. If needed add additional water to top off. It is important that the daikon and carrots remain under the liquid. I use a small 4oz jar to weigh the vegetables down and keep them submerged. Screw on the lids, being careful to not overly tighten. There will be some off gassing as the fermentation process occurs. So just finger tight should do. Store at room temperature until pickled to your taste, about 2-5 days. Refrigerate when ready, for up to 5 months, or until too sour or veggies lose their crunch.

    Good morning Alone, great idea using your wood stove as a dehydrator. You are becoming a natural woman living in a remote area. Not many woman like you anymore, which is why I am still single, lol. I am really enjoying watching your videos, to tell the truth, I wasn't so sure in the beginning but, you certainly caught my attention and I am glad. What I like about your new life and videos is, you have fun at it and that is what makes a real BUSHRAT. That's right, a BUSHRAT is what we lifelong Alaskans refer to someone who can live simply off grid and make it work. Welcome to the clan.

WOW 😁 So you had your doubts huh? 🤔 Some city slicker gal just buying a cabin out in Alaska, wearing dresses and a hip holster and cooking duck? I don't blame you one bit actually!! 🤣But I do love this life and this lifestyle and am happy that I get to finally do it. AND that there are so many great people sharing their knowledge with everyone! It just makes this entire journey so much fun! Tough! But fun! There are not many that have the amount of experience in Alaska as you do John, so I take this as an incredible compliment! Good to be a part of the BUSHRAT clan.     Being a mother of 3 boys (all grown now). They used to complain that there was not any "good food" in our house "just ingredients" LOL. I cooked everything from scratch. Love a good Bánh mì sandwich. Good video.

      My kids were the same way until I taught them how to cook with those ingredients. It was nice to hear my kids tell me we needed more "spices" instead of we needed more junk food! And I stop for all Banh Mi sandwiches! Even at the airport! Thank you! 🧡😁

    Man shopping for 6 months at a time would be a tough one for me. Not that I couldn't do it but I wouldn't be able to catch the deals and sometimes thats the highlight of my day. Since I work in a grocery store I'm always catching the deals. We have been doing a ton of canning lately with marked down veggies and meat. Never made the carrot and Daikon pickles befor but im going to have to try it. I LOVE Daikon radishes. Thanks for sharing the rest of the story. Till next time God Bless

      See that is smart! Work the grocery store and you get to see the deals before anyone! You make the best videos on preserving marked down bargains! The parmesan wheel was an interesting one too! But no chain grocery stores out here! Just the mom and pops that only employ mom and pop! 😁 Hope you like the daikon/carrot mix! I think you will love it! Careful though!       @@randallbundy108 I see your point But this isnt a liberal- thing its a capitalist thing we live in a capitalist country not a conservative- liberal country. Both sides want us to spend our money as soon as we get it. The more we spend the happier they become. I say catch the deals on the things you will be using instead of paying full price and falling farther behind. I wish we could go bact to being self sufficient but we both know that will never happen especially in Alaska we simply have to be able to buy the things we need. I would never be able to grow enough food to feed myself or family for a hole year. So I must work earn money and buy items at the store. For alone she shops every 6 months and has to pay whatever they are asking for at that time. Me I catch the deals and most things I never pay full price for. Like peanut butter,butter,bread,meat,eggs,flour,noodles,and the list goes on. But yes I do understand what you mean.

      Do Chua and Banh Mi are some of my favorite meals! I learned to make it in Colorado because I would order it so much at the restaurants and I knew I would want to eat it still in Alaska! No Door Dash out here! LOL! And I want to cook things out here that not too many people in Alaska are cooking! So many recipes to make still! Stay tuned! :-)

    For fine chopped celery, slice each stalk vertically in 4 parts, then slice across.

    OMGOSH Zucchini bread yummmmm it's a family favorite for us!! I recently purchased small loaf pans so I can make zucchini bread in my camp oven and because I was SHOCKED at the cost of zucchini I planted two plants so i can grow my own. Not an easy feat in the desert but I'm stubborn and determined!!

      My planned garden someday will have plenty of zucchini! I do like it fried up but in zucchini bread 😳OMG! Put some butter on that and with a cup of coffee or tea! HEAVEN!! I think a zucchini loaf would only last about 8 hours 😁 Well! Kenai needs some too! It's not just me!! 🤣 You will make those zucchini grow! Bring the plants inside if you have too! 😁 Zucchini bread is at stake here Liz!!

    I have been binge watching and subscribed . I recently moved from the Texas coast to Northern Michigan and people wondered why . Not as remote as you but I am raising Grandsons . But I totally get it ! And the fact that you can work remotely and obviously have computer and editing skills I bet this channel will pay for an Awesome deck by this time next year . Thanks for entertaining me while I wasn’t feeling well the last few days ! We got work to do , it is Spring !

I am retired Air Force and was stationed in Alaska for seven years back in 85. I love the Summers, but the Winters are very harsh. Thank you for sharing your life with us.

      Dianna first I would like to say "Thank you for your service" 100%! Your service is why I can live the way I do! Summer time is nice in Alaska and that's why it fills up with tourists! Fortunately and unfortunately sometimes. Tourists don't bother me one bit as long as they are courteous.😉 But winter time is pretty harsh! 😳I think I enjoy winter time more but don't quote me on that just yet!🤣I do thank you for joining my journey here in Alaska!

      I didn't really know about daikon until I had a Banh Mi sandwich. They are the worlds best sandwich! The carrot and daikon mixture is in it. So yummy!! But this mixture is great with steak too! 🤣 Thank you Christopher!

    I love that you wear long skirts!! I do too, and although we're not as remote as you are, we're homesteading the Adirondack region. I love longer heavy skirts, and really tunic dresses and shorter knee length for summer or deep snow. Enjoying sharing your journey!

    Poor Rezneck upbringing here. Your favorite meal is close. Fried taters, with some leftover beans and hamhocks over the top next to the steak over fries, and I do love my fries! Dad would say venison steak over beef, used to agree, but I'm a beef eater. Picked berries, gathered roots, gathered greens, hunted whatever was wandering the ranch, gardened, canned, the whole old school method was our normal. Still stock up like we're way in the boonies, but it's a bit closer to town now. Gotta be 25 cases of canned veggies within 20 feet of my office space, upgrading beer making gear to keg instead of bottles. Hate cleaning all those things! More people should be taking cues from you, especially with the upcoming fun we seem to be aimed at.

    Great idea by stocking up on food and supplies cause of your location there. That was an interesting way of hydrating using the wood stove. Pickling is another great way storing food for several months. When I lived on the farm back in the 70's my mon and dad did that too and even still once we moved too the big city.

      With winter around here and no way to plow the driveway yet, I have to prepare for worst case scenario. It takes a huge effort to get ready for winter and eventually when I have my garden built I wont have to purchase so much. Pickling and dehydrating are effective and the food still tastes awesome! And like your mom and dad, it can easily be done anywhere! Thank you so much Lenny! 🧡🤗💚

    I’m making my list now for your radish and carrots 🥕. This is the first year I will be fermenting . I’ve canned for years. I should say I’m 70 years. I’m going to visit Alaska in August.

    Hello Alone, next time you visit one of the awesome rivers in your area, look for river rocks, smooth and round that would make perfect weights for your jars, keep with the whole natural vibe. “Daikon taste like Jicama”, now that really helps, haha I’ve had Jicama at Mexican restaurant before, just don’t see it around much, and I cook. Ribeye, homemade fries and Beer? Where have you been all my life? Take care, Funny lady

      Well that could work! I like to collect river rocks anyway (shhhhhh!! 🤫) I know daikon is available everywhere, even Walmart. Probably just called white radish or asian radish. Don't all gals like Ribeye, fries and a beer?? 🤣 No salads for this gal! Well that's not true. Fruit salad! Taco salad! Potato salad! ok ok I will stop! 🤣

    Yep, Ribeyes, Delmonico's here as well. As an old guy of 58, I still have not yet had a better steak or loaded taters at a restaurant better than I make myself. I usually get taken advantage of at camps, I get to be camp cook, but I guess I asked for it with my welded steel cookbox (bearproof). I never understood why more men don't cook more, I don't know one that doesn't like to eat. Subbed.

      A man that not only loves to cook but can cook a great meal is pretty rare! For most, once you get past chili it goes downhill LOL! And I am not talking about chefs that cook a tiny filet with fancy garnish! Spare me!! When I was raising my kids and we would eat at restaurants they would always say the way I cooked it tastes better. And that wasn’t even giving them the evil eye to make sure they said it! At 58 years young, you may be camp cook for a long time! Alaska is always looking for camp cooks for the hunting lodges! Just FYI :-) Thank you so much for the sub! It is greatly appreciated!

    Hello I just came across ur channel... ur carrot n dicon recipes sou do good. I do beets an a pepper an onion an jalapeños in a bread an butter brine.... an than cool store them .. refrigerator storage... they turn sweet an not hot...

      I wont say there was never a time in my life that I pushed a cart like that around though. I did go through pregnancy three times!! 🤣 BUT I never allowed my kids to eat like that. My eldest son would actually crave vegetables! Like get mad because I didn't put enough veggies in a dish! 🤔My daughter became a vegetarian. Lets just say I got to eat a lot of steak 😁 Roof project starts next week! Very excited! I think 🤔 Thank you Ashley!

      @@AloneinRemoteAlaska I have a love hate relationship with food. I'm allergic to milk/ dairy. Favorite thing in the world is a chocolate milk shake. But it is one of the most painful things to consume for me. I have just recently had to change the way I eat. Not what I wanted, but I guess it's better than the alternative 😁. I could never be a vegetarian. I guess I am getting closer to it than I would have wanted, but I'm not going to give up on my steak and burgers altogether, just cut way down.

      @@ashleyanderson2859 I cant eat onions or eggs. Sometimes I just eat eggs and pay for it later. I do try to avoid onions though. But onion or garlic powder (which is in everything prepackaged) will knock me out for a spell. No way could I be vegetarian or vegan either! Life with no steak or hamburger or duck? NOPE! 🤣

I make up all my missing sleep on the weekends! If I am not running to town. 😁

    Stumbled upon your channel a few hours ago by the blessing of the TH-cam algorithm. No idea how exactly that happened, but nevertheless, I’m glad it did.
    I’m quite possibly the furthest away from you that is possible. I’m an eighteen year old living in Melbourne, Australia. Started Uni (basically College) in a degree I’ve always wanted to study. It’s fun - don’t get me wrong. But… sometimes, whenever I’m least expecting it…
    I feel “disenchantment” to be too strong a word, but whatever it’s milder cousin is - that’s probably what I feel.
    Who knows. Maybe it’s a side-effect of mild anxiety. At this point I feel it matters little in the context of this comment.
    Currently going through and binging your videos. They’re beautiful. Not necessarily referring to the editing - but I mean it in the sense that your content is so genuine and calm, tranquil yet moving, subtle yet clear.
    Its definitely something that’s caught my eye and tugged at my heart.
    Keep doing what you’re doing - and I’ll watch your journey with great interest. May your path be well-lit on your journey onwards under a sky full of stars.

      However you found my channel I am very glad you did! You really are far away huh 🤣 But at 18 years old, you have SO MUCH time left to decide what matters most to you. Finish college THEN decide what to do. It's always smart to have a back up plan! I have been planning this lifestyle for decades and I finally get to live it! I didn't necessarily plan on doing TH-cam though 🤣 But so glad I did. But my channel is the real deal. Just a gal finally living her dream life. And all the struggles and excitement of doing it.     Just found your Channel and watched them all in one day. Your a brave lady. I could handle the isolation but the cold no way. Im in Ct and 20 very rarely 10 degrees is too cold for me. I also love my big veggie garden and chickens ducks and rabbits. It seems it would be much harder to keep them all alive there. Good luck with your cabin and you have a new viewer.

      I have had great luck finding what I need in various cities/towns. I do try to hit as many stores as I can to get everything I need in one trip. I just ended up buying half a hog and half a cow so I don't have to do any meat shopping in town. Thank you Denise! 😁

    Please journal all the little things that don't make it to a video you may just do a book one day! Buy sturdy rectangle washing up bowls with side handlesfor the freezer.( not dollarstore type) I use them stacked. Each one holding one type of product fish, veges, pork etc. So vertically bottom to top, in a stack of bins, all beef for example. Works for me. I have even made a list of what is in there and how many, because it's easy to forget. I then change that number when using. I can also see that I need to start using up certain items as I haven't adjusted that item on the list much. The pickle is going to be tried this week.

      Hey I like that idea for the freezers! Heck anything is better than the way I have it now! :-) Lists however I am not so good at. I could make one but I just know me.     That pantry wall looks great! I too do not buy anything ready, although I have to admit, I love chocolate! 😊 Right now I have a lemoncake in the oven.     I'm not a baker ...anymore. My kids are all grown up and neither my husband nor I 'need' cookies and other goodies. BUT, I do bake at the cabin while we are there over the winter. I make bread, cinnamon buns and occasionally cookies.
    I dehydrate celery too, as well as carrots, zucchini, apples, peaches, apricots (we summer in the Okanagan area of BC). It makes it so easy to whip up a big pot of soup at the cabin. I open a jar of canned moose, add handfuls of dried carrots, dried celery, freeze dried onions, dried potatoes (my husband grew a ton of potatoes the first covid summer, and dried them on window screens on our deck.) and dried zucchini. Throw in a can of diced tomatoes and season to taste. Nothing like hot homemade soup after being outside in a northern winter! I'm going to have to try you pickle recipe! Looks yummy! Take care!-Sue

    Spring has sprung here in NW California. I planted 3 dozen strawberry plants about two months ago and they're starting to flower. I have to cover them with chicken wire, or the deer will wipe them out overnight. We get earthquakes here fairly regular, and I think Alaska does too? I added a front lip to my pantry shelves to keep stuff from falling to the floor. Just an idea for you. I'm very excited to see the new roof get put on! Thank you for bringing us along.

      OOOO strawberries!!!! I will definitely be planting them! When I start my garden, strawberries will most likely be in the geodesic dome (for protection). Maybe put some auto tracking machine guns in the garden for them pesky animals trying to eat my winter harvest! Ok maybe just chicken wire but you know. Same concept. 😜Alaska does get earth quakes. Its either more than any other place in the US or the world.😳 But yes, I will be adding a lip to the shelves for sure. Thank you for the reminder! Roofing starts next week!     Hello from Dublin Ireland. I just found and subscribed to your channel today. I also live alone and i have 3 cats. I love to watch other peoples alternative or differant lifestyles its very inspiring and you can learn a bit. Also i don't feel so lonely bit i like living alone so it is not really a big problem. I have so far watched a few of your previous videos. Do you mind me asking how do you support yourself there do you seasonal or from Home? I am early retired.

We talk. I usually win all the arguments. But not all. Currently I work for the same company I did in Colorado. I sit in front of my computer at the cabin and I do purchasing and reporting. Lots of emails and lots of excel spreadsheets. My goal is to be able to do TH-cam full time someday though. Thank you so much for watching my videos and commenting Linda! :-)

    you can bake bread rising it in the oven, turn oven on 5 min and turn off then place the bread to rise. It’s that simple. Your wood stove can also be used to rise bread!

      I have been to a Costco a few times in Colorado. Back when I was married. I haven't shopped Costco out here in Alaska. Not yet anyway. But I think a lot of the smaller stores that I hit up from time to time get their stock from Costco. Sure makes it easier for them. I have purchased Kirkland brand stuff at Krogers/King Soopers. :-) Thank you so much!

      HA! Yeah sorry about that! I noticed it when I was editing and was like "no more diakon for a reshoot" 🙄HOWEVER is was just a broken fingernail , no blood! I even took the bandaid off and filed the nail down and didn't even realize I just filmed myself with it on! And that bandaid was only on for like 5-10 minutes! Looked like a troll doll! 🤣

    Love your dehydrator! You could also Build some racks that'll sit on top of the wood burner too.

      There is a rack hanging above the stove (previous owners) but its too darn high! 🤣 I do plan on building an outdoor kitchen with a dehydrator too. But yes I will be rigging the rack above the stove so I can reach it and possibly dehydrate more at one time. Lots of fruits and veggies to dehydrate! 😁

      @@AloneinRemoteAlaska love it.. I do a lot of salted beef jerkey in the electric oven on broil. Only takes about 20 minutes, 15 and flip for about 5. I've also used the smoker to make jerkey in.. that's always some tasty stuff! 😋

      @Alaska Pirates Huge outdoor kitchen planned! May make it so I can use it in winter too but not when it gets to 50 below and 80 mile winds! An outdoor kitchen is a "must have" for me! One of my life long dreams! Well, besides this cabin of course! 🤣

I sipped it and was like NO WAY!! But when you mix it with food, oh dear! It's incredible! If you are ever in Anchorage or Fairbanks and see Banh Mi sandwich, buy one!     I'll try this. Fermented foods are supposed to be good for the gut microbiome, and that helps depression. Amazing that the gut and the brain are so connected.

    Omg I love you..just found your channel.Everything in this video I needed to know.I have a whole head of celery I haven't used and it's gonna go bad.So this is a wonderful idea.Also I tried dehydrating a few things in my brand new air cooker that has a dehydration setting.It sucked!!!So I needed a new way to do it.I have a woodstove and that is a great idea!!!Also I needed a canning recipes for carrots.I always have so many from the garden.So thank you for all your helpful advice.I will be a frequent flyer of your you tube channel.You rock!!

      Well Lissa75 you sound like my kind of people! 🤣 Gardening is so much fun (and work) it's awesome when you get a nice bumper crop! Figuring out ways to store all the fruits and veggies can be difficult! I love pickling what I can. I store carrots in very damp sand and they keep for many months! Crispy too! But dehydrating is great. Still lots of work but better than throwing it away! 😉 I try and stay away from electronics when I can especially when cooking! I didn't even have a microwave for years in Colorado. Thank you so much for joining my journey here in Alaska! I hope all my videos will be informative and entertaining! 😁

    Just found you and subscribed. Looking forward to watching your vlogs. I have two deep freezers, one for veggies, breads, misc... and one for meats. When I bake I make several sweet items to cut up and freeze in single serving in case I want something with a cup of java or tea. Again, looking forward to watching your vlogs.

I cut up and package my single servings as soon as sweet baked breads, etc... are done cooling or I also would eat entire item. Being in the freezer I forget about them till I am going over the edge for something sweet. giggling :) Wishing you many more subscribers, peace, love and good health.

      I have noticed that I do not eat as much meat as I used to. I really enjoy the veggies a lot! Certainly not ever going to be vegetarian though! I do like duck and other game fowl. A nice steak is awesome! As for fish I really do like trout and catfish. Salmon I prefer raw or smoked! I have never used an air fryer! LOL :-)

    I noticed that you used some plastic bags for freezing, you might find that a Food Saver will greatly extend the time you can fend off the freezer burn. I’m on my 2nd one, my first lasted about 8 years and through a house of 4 adults! If I had to choose only 2 appliances in a remote setting they would be my Food Saver and Kitchen Aid with grinder and barrels . Definitely time and $$ savers. Love your channel!!!

      I do have a Food Saver but its in storage in Colorado! No idea why I left it there but my son will be bringing up all my stuff in August. I should have purchased another one (as back up) but I just couldn't do it! I have never owned a Kitchen Aid mixer though. But I do want to get a manual grinder! Have to have a grinder!     I am glad that you made your way out of Denver. I am in Cheyenne WY and I dread every time I have to go that way for any Doctor's appointments or to the airport, etc. The political system of Colorado is a nightmare, but so are a lot of people (pretty much across the board). I thoroughly wish I could do what you are doing.

      Colorado (AKA little California) was getting way overcrowded for me! And the politics! GRRR 🤨I would have gladly moved to WY to get out. And almost did! But figured I wanted to get even further away! The great thing about Alaska is it has the most land of any state and few people! Sounds like a perfect escape place for you! Take baby steps towards living this kind of life and it will happen. All I needed was for my kids to want to go live their own lives and I was running to Alaska! (yes I told my kids where I am!) 🤣But I did a lot of prepping prior to making the move. Decades of prepping. You can make it happen! 😁

      I have never been one to like pickled eggs. I have to limit how many eggs I eat anyway. I get somewhat ill when I eat eggs. Doesn't stop me though. But If I am going to risk getting ill, I will eat the eggs over easy! They don't bother me in baking though. But pickled eggs can store for years! Or decades as I cant eat them 🤣 BUT they are very tasty if pickled correctly. Obviously 🙄Thank you Robert!

    I’m enjoying your videos, I’m watching from the beginning but skipped ahead here. As far as baking goes, I can’t believe you don’t bake your own bread.. there are so many easy ways of bread baking. The no knead method is all by far the easiest and best bread there is. You could even make bread in a cast iron skillet on top of the stove. Where do you bake your zucchini bread? You have a wood stove, just place any yeast dough somewhat near the stove or even put the bowl with the dough underneath a few blankets to rise. You don’t need a warm cabin to make a yeasted bread loaf that ferments overnight. Look up No Knead Bread, you’ll be shocked at how easy it is. I bake mine in a 9 inch cast iron skillet makes a good size round loaf.

      I have made bread and zucchini bread on the wood stove. I just have to get the stove hotter than I like. I feel more comfortable at 60 degrees in the cabin. Basically the stove sometimes isn't even lit. I have not tried "no knead" bread yet but I have a couple TH-cam videos I saved. 🤔Someone mentioned skillet bread too that I want to try. When I have my outdoor kitchen built I will have a brick bread oven in it so I plan to make a lot of bread. But I will definitely try the "no knead" bread and skillet bread! Thank you for the reminder! This is why I need viewers to comment! Love it! 😁

      Careful Brenda! Once I learned how to make this, I crave it almost as much as caramels when its all gone! 🤣 But it is nice to have a fully stocked pantry again! Sometimes I just stand there and look at it grinning! 😁 Ahhh the little things!

      Daikon is also great sliced thin and added to beefy soup. Very mild tasting. Koreans use it a lot
