I found this video while looking for ways to seal Mason jars with a vacuum sealer and I'm wondering if the shelf life would improve beyond 3 days if you sucked the air out and stored in the fridge?
I love how aesthetically appealing your food is...it's always so colorful and looks fresh and appetizing. The salads in a mason jar are great because of the variety you provided. I'll have to try them all once I'm done getting set up in my new place. Moving in July is NOT fun...especially in TX. Ugh. :) BTW, happy 3 months to your cutie, Erisy. Do you have to go back to work now?

I'd try the OPA or Forager. I need to eat a lot of salad, but being 36 weeks pregnant I can't eat a lot, and I have no interest in meats, and I LOVE chick peas!

I eat variations of the Opa! -with chicken or shrimp - and Farmers Market salad all the time, so I would love to try the Forager.

If you prep lettuce in advance, if you leave a piece of paper towel on top, it absorbs the moisture so the lettuce doesn't wilt!
