In Denmark, rules are quite simple: If the major part of the product is not made from milk, it's illegal to call it cheese. Companies use all kinds of other names for it: Pizzatopping, gratinating products, cheese flavoured topping etc. But in reality it's made from water, palm oil, starch, different emulsifiers (as mentioned in the video), flavours and colours - so no milk in it. :/
You can actually get the same exact easy melting effect of american cheese with cheddar cheese. just melt it, and mix it with saltwater. Stir it, and it will cool into a smooth, creamy, easy to melt mixture.

When melted. Melt some cheese in a frying pan, you'll notice the oils separating from the rest of it. Or just cook a pizza with cheese on it, then notice the oil pooled up on it.
It's not really a "problem" for most foods like pizza, it's actually exactly what you want most of the time, enhances the flavour and all. It quickly seeps back into the food most of the time so you only notice when you just take it out of the oven. I also tend to put a _lot_ of cheese on my pizza, may not be so noticeable with a more moderate ammount.
I'm Swiss and I can assure you that cheese does that. If you ever make fondue with pure cheese and white wine, you will find out that the cheese 'separates', meaning the oil seeps out. Usually the fondue cheese mix you buy either has additives, or you have to add flour (or corn flour) to it so it gets smooth again. Usually it's not very obvious because cheese doesn't fully melt, doesn't remain melted for long enough, or the oil is absorbed by something else without you noticing.

A lot of people are lactose intolerant and don't know it. In the past, people did not eat dairy. You should consider avoiding dairy if you have medical issues or just don't feel right. You do not need dairy for bone health as you should get all minerals you need from whole food plant based diet.

French cheese is formidable (Brie, Camembert, Vacherin, Les Bleu, Tomme, Roquefort), but the Swiss make better hard cheese (Sbrinz, Gruyere, Mountain Cheeses, Tête de Moine,Raclette Appenzeller). I enjoy real cheese from all over Europe, from Italy (Pecorino, and all the fresh cheese like Mozarella, Ricotta) and Spain (Manchego), even the Netherlands. But this processed crap is gruesome. It's a shame something like this is called "cheese". For hot foods, you can take Mozarella, Finely schredded Sbrinz or Parmigano, or Raclette cheese. Mach better than this nasty produced crap.

I looooved American cheese, more so than regular cheese, when I was a kid, I would still eat it regularly if there was a vegan, dairy-free version of it. I just love how it's individually wrapped and presented in a cute way, and its texture is very amusing

Then it struck me. I love the flavor and creamy texture of American Cheese. It's simply delicious. These things aren't "better." They're simply wonderful in their own way

Natural cheese is colored almost exclusively with annatto. if you want to make nacho dip a good idea is to make a white sauce mix equal amounts of butter and flour (by weight) than once thats mixed together and made a nice smooth past add milk than stir on low until it starts thickening add cheese look up a recipe for a white sauce

It's not really a "problem" for most foods like pizza, it's actually exactly what you want most of the time, enhances the flavour and all. It quickly seeps back into the food most of the time so you only notice when you just take it out of the oven. I also tend to put a _lot_ of cheese on my pizza, may not be so noticeable with a more moderate ammount.
I'm Swiss and I can assure you that cheese does that. If you ever make fondue with pure cheese and white wine, you will find out that the cheese 'separates', meaning the oil seeps out. Usually the fondue cheese mix you buy either has additives, or you have to add flour (or corn flour) to it so it gets smooth again.
Usually it's not very obvious because cheese doesn't fully melt, doesn't remain melted for long enough, or the oil is absorbed by something else without you noticing.

It doesn't say cheese on the package anywhere. People assume it's cheese because it's next to all the other cheese in the fridge but it doesn't say cheese it says "singles" The only thing cheese about it is it's taste and color while still being sold legally edible.

I love this cheese. Grew as a kid eating slices. Still eating it cuz America. I think it tastes just fine. Not gonna say it tastes like good quality cheese but it sure is good enough for me.

it's found in everything because it binds to everything. it binds to the aminos and lipids in the cheese. basically it makes emulsification in this instance possible and keeps it stable.

I love deli style American cheese. it's the exact same thing I just prefer the taste over individual wrapped sliced kraft singles.
I agree, but it’s definitely different. I’m not sure why, but there’s a distinct texture difference there. Deli cheese isn’t as floppy and shiny. I don’t buy American cheese often but if I must, it’s going to be the Deli kind.

I'm sitting here eating a cheese omelette made with cheddar. It refused to melt properly and the taste is unsatisfying, and I'm just thinking "man, I wish we just had some plain old Kraft or Velveeta in the house."
