Not Your Everyday AeroPress Coffee Recipe: Wade Preston's 2018 US Brewers Cup Qualifier Recipe

  • In this video I walk through Wade Preston's (Founder and Head Roaster of Prevail Coffee: prevailcoffee.co) interesting AeroPress recipe he used for the 2018 US Brewers Cup Qualifier Recipe. In addition, to make it more accessible to the everyday home coffee enthusiast I walk through a couple different ways to accomplish the same things he does in his recipe (Transcript of video and recipe: www.freshlybrewed.io/blog/not-your-everyday-aeropress-recipe)
    Recipe
    *Needed Items*
    1. AeroPress
    2. Fellow Products Prismo attachment
    3. AeroPress filters
    4. A way to sift out fines. Preston uses a 600 micron sleeve for the Kruve sifter. In the video I show how to use a tea infuser to help achieve the same thing.
    *Recipe Directions*
    1. Use an AeroPress filter in Prismo
    2. 50g pre-infusion with 145º F water
    3. Gently stir to saturate
    4. Wait 3 minutes; while you're steeping the water heat your water kettle to 208º F
    5. Pour 155g with 208º F water
    6. Wait 2 minutes 30 seconds
    7. Stir gently
    8. Press AeroPress slowly for 30 seconds
    9. Wait 1-2 minutes before drinking or until the coffee cools. After it cools you will get the best flavors and mouthfeel for your brew

    As I understand for this particular method Prismo attachment is ONLY needed to keep coffee inside Aeropress during longer brew time ( valve function). That is why I brew coffee in a cup lets say for around 10 minutes and then pour it in Aeropress to just simply filter coffee. I also swirl coffee in a cup with milk frother. This method gives heavier body and less acidity. I didn't experiment with water temperature and grind size yet.

    I actually made it, and wow you were right. My coffee came out light, yet somehow more full bodied than it should be. Just overall a very pleasant cup and worth the effort (and mess).

    Do you think it'd be too bad without sifting? Maybe more swirling and less stirring, to not agitate the fines so much?

    Tomorrow is Saturday morning, gonna try it! No prismo, so I’ll be trying inverted. And I’ll be doing the paper towel method to remove fines. I’ll let you know how it goes :)

      Which kind of roast did you use? Which grinder do you have? I have two grinders, so curious what your equipment is like. Or did you use pre-ground coffee?

    OMG! What if you stirred six times instead of five, and what if you waited thirty one seconds instead of thirty? Or Twentynine?! Would this make any F-ing difference at all?!

    Is it allowed to use an additional tools in the competition?

      Yes. You can use two different electrical devices but there is no restriction on additional items used.
